How To make Buttermilk Chocolate Bread
1/2 cup Butter
softened
1 cup Sugar
2 Eggs
1/2 cup Buttermilk
1 teaspoon Vanilla
1/2 cup Semisweet chocolate chips
melted 2 1/4 cups Flour
1 teaspoon Baking powder
1 teaspoon Baking soda
1 pinch Salt (opt)
1 cup Pecans :
chopped
1/2 cup Glaced cherries -- chopped
CREAMY CHERRY GLAZE- 1 1/2 tablespoons Cream
2 tablespoons Glaced cherries finely
chopped 3/4 cup Powdered sugar :
sifted
Beat together first 5 ingredients until blended. Beat in melted chocolate. Combine and add next 4 ingredients and stir until dry ingredients are just moistened. Do not overmix. Stir in pecans and cherries. Divide batter between 3 greased and lightly floured mini-loaf foil pans (6x3x2"), place pans on a cookie sheet, and bake in a 325~ oven for 45-50 minutes, or until a cake tester, inserted in center, comes out clean. Allow to cool for 15 minutes and then remove from pans and continue cooling on a rack. When cool, drizzle tops with Creamy Cherry Glaze. Yields 3 mini-loaves.

Today I'm trying out Claire Saffitz's Chocolate Buttermilk Cake from her cookbook Dessert Person. The buttermilk in the cake kept it nice and moist during the baking process. The texture of this cake was incredibly tender and a little crumbly at room temperature. I actually preferred the cake SLIGHTLY chilled -- it took on a richer and fudgier quality. I assembled this cake using Claire's recipe for French-style Buttercream -- it's in a separate video and it was ... intense.

In today's video, I'll show you how to make Homemade Buttermilk Bread - Bread with Buttermilk.

I made some butter recently, video is here and though I know you can use buttermilk to make some yummy treat, I've never tried baking bread with it till now.
To bake this bread, you'll need:
3 1/2 cups all-purpose or bread flour
1 1/2 cups buttermilk you can make a substitute using fresh milk and lemon - I show how to here -
2 TBSP melted butter
2 TBSP sugar
1 tsp salt
1 TBSP yeast
Then follow the steps in the video (feel free to pause and play as needed)

Chocolate Buttermilk Cake

Banana Buttermilk Bread
Recipe
5 ripe bananas, mashed
150ml vegetable oil
200g brown sugar
1 tsp vanilla
2 eggs
75ml buttermilk
200g Plain Flour
1 tsp bicarbonate of soda
1 tsp baking powder
1. Preheat the oven to 180°C. Line a loaf tin.
2. In a bowl Beat together the oil, brown sugar, vanilla, eggs, buttermilk and the mashed bananas until combined.
3. Add the flour, bicarbonate of soda, baking powder to the banana mixture and beat all together until smooth.
4. Pour into the prepared loaf tin and bake for 40-50 minutes until skewer comes out clean.
