How To make Cape Cod Cranberry Bread Bake

french bread loaf, or italian trimmed of crusts, cut in thin slices

Directions:
From Massachusettes' Cape. Delightfully different for Thanksgiving,
Finely grate the peel from the orange. Remove the skin and membranes for the orange. Section the orange and cut each section across into thin slices. Combine the orange peel, orange slices, cranberries 1 1/2 cups sugar and the water in a medium saucepan. Heat to boiling; reduce the heat.
Simmer covered 10 minutes. Remove cover and continue to cook until slightly thickened, about 5 minutes. Remove from heat.
Preheat the oven to 325F. Beat the eggs with the cinnamon in a large bowl until light. Beat in the remaining 3/4 cup sugar, the milk and 1/2 cup cream, Grand Marnier liqueur and vanilla.
Place a layer of bread over the bottom of a buttered 2 qt souffle dish. Using a ladle, add enough egg mixture to cover the bread. Spoon one third of all the cranberry mixture over the top.
Repeat the layers two more times, adding all the egg mixture to the dish before spooning on the last third of the cranberries. Bake until firm, about 1 hour.
Serve slightly warm or at room temperature with heavy cream.

Chocolate Chip Cranberry Blueberry Banana Bread
When the bananas are browning it’s time to whip up a yummy treat!
Ingredients:
2 1/2 cups flour of choice
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
2 large eggs
1/2 cup maple syrup + 2 tbsp
1/2 cup plain Greek yogurt
1/2 cup milk (I used almond milk)
3 very ripe bananas, mashed well
1 tsp vanilla extract
1 cup Cranberry Blueberry Blend
1/3 cup chocolate chips
Instructions:
1. Preheat oven to 350 degrees F. Spray or line a loaf pan with parchment paper and set aside.
2. Combine dry ingredients in a large mixing bowl.
3. Combine wet ingredients in a medium mixing bowl. Whisk until smooth.
4. Pour wet ingredients into large mixing bowl with dry ingredients and stir to combine.
5. Fold in 3/4 frozen fruit (saving some for the top) and the chocolate chips.
6. Pour mix into loaf pan and sprinkle more frozen fruit and more chocolate chips (or chunks!) on top.
7. Bake for 50-70 minutes or until edges are lightly browned and toothpick interested into the center comes out clean.
8. Allow to cool completely before serving.

Cranberry Jalapeño Poppers
Ingredients:
1 cup Cape Cod Select Frozen Cranberries
1 tbsp. Orange zest
1/2 cup fresh squeezed orange juice
2 tbsp. Honey
8oz goat cheese
10 jalapeños (seeds abs veins removed)
1/4 cup panko bread crumbs
1 tbsp. Olive oil
Salt and pepper to taste
Directions:
Preheat oven to 400 degrees and prepare a baking tray with parchment paper.
In a small sauce pan over medium heat, combine cranberries, orange zest, orange juice and honey. Let mixture come to a boil and allow cranberries to soften. Reduce heat to low and let simmer for 5-8 minutes until mixture is reduced.
Place cut (seeds and veined
Removed) jalapeños into baking tray.
Pour cranberry mixture into a medium sized mixing bowl with softened goat cheese. Mix to combine with a hand mixer.
Scoop cranberry and goat cheese mixture into jalapeños.
In a small bowl, mix bread crumbs, olive and salt and pepper. Sprinkle mixture on top of jalapeños.
Bake for 20 minutes.
Allow to cool before serving.
