Cranberry Balsamic Chicken | Delish

INGREDIENTS
1 tbsp. olive oil
1 lb. skin-on, bone-in chicken thighs
2 tbsp. butter
1/2 c. fresh cranberries
1/3 c. balsamic vinegar
2 cloves garlic, minced
6 sprigs rosemary
2 tsp. thyme leaves
1 tbsp. brown sugar
Zest of 1 orange
DIRECTIONS
1. Preheat oven to 325°. In a large ovenproof skillet over medium high heat, heat olive oil. Add chicken skin side-down and cook until the skin is golden and crispy, about 4 minutes. Remove chicken from heat and place on plate, skin side-up.
2. Melt butter in the same skillet then add cranberries, vinegar, garlic, brown sugar, and orange zest. Return chicken to skillet and scatter herbs all around. Simmer until the liquid begins to thicken and the cranberries start to soften, 5 to 10 minutes.
3. Transfer to oven and cook until the chicken thighs are cooked through, 18 to 25 minutes more.
4. Serve warm.

Ingredients
* 2 tablespoons olive oil
* 6 chicken thighs
* salt and pepper
* 1/4 cup white wine
* 1/2 cup real maple syrup
* 1/4 cup dijon mustard
* 1 cup fresh or frozen cranberries
* 4 sprigs fresh rosemary (or 1 teaspoon dried rosemary)
Instructions
* Preheat your oven to 375 degrees Fahrenheit.
* Heat a large oven-safe skillet over medium-high heat and add the olive oil.
* Season the chicken thighs on both sides with salt and pepper and add them to the hot pan to sear them on both sides until golden brown. Don't worry about cooking them through at this stage, just focus on crisping the skin.
* Once the chicken is browned, remove it to a plate and set aside.
* Add the white wine to the pan with the chicken juices and whisk as the wine begins to evaporate.
* Add the maple syrup and dijon mustard, and whisk to combine until a thin sauce forms.
* Add the chicken back into the pan and spoon the sauce over the chicken.
* Sprinkle the cranberries into the pan over the chicken and add the sprigs of rosemary around the chicken.
* Bake for about 20-25 minutes at 375 degrees Fahrenheit until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 Celsius).

Oven Roasted Cranberry Glazed Chicken.
Christmas is in the air and that means baking, cooking and lots of eating. The Christmas lunch spread comes with fanfare and is usually planned weeks in advance. But if you’re in a pinch and looking for a main dish that doesn’t require too much pre planning but would still impress, this Roasted Cranberry Glazed Chicken is a sure win!
Using the pan drippings, we add Ocean Spray’s Cranberry Juice along with some warm spices like clove, cinnamon and a bay leaf to create a tart, sweet and flavourful sauce that will be the star of the show.
Try out this recipe and scrape your plate clean this Christmas – there’ll be no leftovers after this one.
Ingredients
1 whole chicken
4 tbsp minced garlic
1 tbsp onion powder
2 tsp ginger powder
2 tsp cayenne pepper
2 tsp lemon pepper
1 tbsp sugar
2 sprigs rosemary
5 tbsp unsalted butter
salt to taste
1 cinnamon stick
4 grains whole clove
2 bay leaves
Method
Combine garlic, herbs, along with onion powder, ginger powder, cayenne pepper, lemon pepper and butter in a bowl to form a paste
Push a generous amount of the butter/paste underneath the skin of the chicken around the breast
Apply the remaining mixture to the chicken making sure to smother the entire chicken
Place chicken in a roasting tray and cook covered in a preheated oven at 350 degrees for 40 minutes
Drain juices from chicken into a pot then add cranberry juice, bay leaves, cinnamon and whole cloves
Reduce until thickened
Baste the chicken with cranberry glaze
Return to the oven and cook for an additional 8 minutes or until brown.
Use remaining juices to apply a final glaze to the chicken for extra flavor and moisture
Allow to cool for 5 to 10 minutes before carving
