How To make Caraway Swiss Chicken On Spinach
1 10 Ounces Pk frozen spinach
1 Pound boneless skinless chicken breasts
about 4 halves
3/4 Cup skim milk
2 Teaspoons cornstarch
1 1/2 Teaspoons chicken bouillon granules
1/4 Teaspoon caraway seed
1/8 Teaspoon pepper
2 Ounces nonfat processed Swiss cheese :
torn into pieces
1 Dash tabasco sauce
Cook spinach according to package directions; drain well. Divide among 4 au gratin baking dishes. Meanwhile, spray a COLD large skillet with nonstick coating. Add chicken. Cook over medium heat for 8 to 10 min or till tender and no longer pink, turning pieces occasionally. Place chicken atop spinach. Keep warm. For sauce, combine milk, cornstarch, bouillion, caraway, and pepper. Cook and stir till thickened and bubbly. Add cheese and tabasco; stir till melted. Pour atop chicken and serve.

Ingredients:
1/4 cup/60 ml olive oil
1/2 cup/50g sliced almonds
1/2 tsp paprika
2 garlic cloves, thinly sliced
2 (14.5 oz/400g) canes, plum tomatoes
1 lb 2oz/500g Swiss chard, stalks thinly sliced and leaves roughly chopped
salt
4.5 oz/130g spinach, roughly shredded
2 limes: finely zest to get 1 tsp, then juice to get 2 tbsp
1.75 cups/35g mint, roughly chopped
1.75 cups/35g dill, roughly chopped
8 green onions, chopped into 1/2-inch/1cm pieces (1 cup/80g)
Recipe summary: Fry almonds over medium high heat in oil with paprika for 2-3 minutes and drain through a sieve to separate the oil. Fry garlic and caraway seeds together. Add tomatoes with juices. Add chard and salt, crushing up tomatoes. Cover and cook for 20 minutes, stirring occasionally. Remove from heat and stir in remaining ingredients. Sprinkle almonds on top.

Reuben Casserole
This is a super quick & easy recipe to throw together with leftover corned beef!
This is a family favorite I should make more often. Because I know everyone loves it and corned beef is on sale now, I got 2 and tossed them in the crockpot overnight. The next day I took them out to cool while I went about my day and threw the casserole together at the end of the day.
I suggest making a double batch or making one and using the other corned beef for another meal.
Reuben Casserole
Serves 6-8 (doubles nicely)
4 ounces cream cheese, room temperature
1/2 c finely chopped onions
Half (12 oz) jar of thousand island dressing (I used Marie’s)
16oz cooked and shredded corned beef
8oz sauerkraut, drained
5 oz bag of shredded Swiss cheese
1 tsp caraway seeds (optional)
Preheat oven to 350. Grace an 8 or 9 inch square pan.
In a large bowl, mix the cream cheese, thousand island dressing and onions together. Add the corned beef, sauerkraut, Swiss cheese, caraway seeds and mix well.
Spoon everything into a prepared dish and bake for 20 to 22 minutes until bubbly and browned on top!
Serve with a relish tray of pickled vegetables, crudités and deviled eggs or alongside cauliflower or broccoli mash.

- Sauté Sauerkraut - chill if warm
- Cut OCP Caraway Pasta Sheets into 3rd's
- Mix a little egg wash to seal egg rolls
- Add Corned Beef, Kraut, Swiss Cheese to Pasta sheet and Roll.
- Fry until outside is lightly browned.
