Easy 3 Ingredients Moist Soft and Fluffy Almond Cake
Ingredients:
4 eggs
1 cup (190g) sugar
1 1/3 cup (250g) almond flour
1tsp almond extract (optional)

Orange Cardamom Pecan Muffins Recipe
Fall is here and warm spices enhanced Orange Cardamom Pecan muffins are just the thing to satisfy your sweet cravings. Made with Almond & whole wheat flour, they are full of protein, fiber & good fats. The flavors of cardamom, cinnamon, nutmeg & ginger work together to create magic!!!

Bake Time - 25 mins
DRY INGREDIENTS
1) 1 cup Almond Flour
2) 1 cup sprouted Whole Wheat flour
3) 1 tablespoon cinnamon powder
4) 1 tablespoon ginger powder
5) 1 tablespoon cardamom powder
6) 1 tablespoon chia seed
7) 1/2 tablespoon nutmeg powder
8) 1 tsp baking soda
9) pinch of salt
10) 1/4 cup Pecans
WET INGREDIENTS
1) Zest of 2 oranges
2) Juice of 1-2 oranges (add more for sweeter muffins)
3) 10 tablespoons of Dark Grade A Maple syrup (I have used only 5 tablespoons but mind you, they make very mildly sweet muffins - but that works for me. I recommend using 10 tablespoons for a regular palate)
4) 1 tablespoon EV coconut oil
5) 1 tablespoon plain yogurt
METHOD
1) Preheat oven to 350 degrees F
2) Zest 2 Oranges
3) Extract Juice of oranges
4) Mix the orange zest, juice, coconut oil, yogurt & maple syrup together. Set aside
5) Mix all the dry ingredients except the whole pecans very well
6) create a well in the center of the bowl containing the dry ingredients and add the wet mix to it
7) Mix everything well
8) Grease a muffin pan with Pam spray
9) Spoon batter into muffin pans- makes 5 average sized muffins
10) Bake for 25 mins or until pick in the center comes out clean
11) cool slightly before consuming
12) Enjoy with a cup of warm coffee or apple cider!!!

Soft, moist, and Eggless Banana Walnut Muffins! This easy and vegan muffin recipe comes together in minutes, and they bake up perfectly every time!
They’re crispy on the outside, soft and fluffy on the inside. You only need a couple of ripe bananas and a few basic pantry ingredients to get started.
You don’t need fancy equipment – just use one bowl and stir everything together with a spatula!
Important notes -
Don’t over mix the batter! This is my TOP TIP for the perfect fluffy muffins!
If you fewer bananas don’t worry, that will work too, there will just be slightly less banana flavor in these muffins. You can use 1 extra banana too to get more flavors of banana.
Adjust the sugar according to the sweetness of the bananas. If the bananas are not very ripe then use a bit more sugar to adjust the sweetness of these muffins.
You can easily double or tripled this recipe.
To get fluffy muffins with the nice dome shape on top, fill the muffin pan or the liners up to the very top and get them in the oven immediately.
You can flavor these muffins with cinnamon, nutmeg, cardamom, or saffron.

Blueberry Almond Muffins Recipe
Those blueberry almond muffins are perfect treats to serve during your brunch gatherings. Ours are made using FAGE Total Greek yoghurt which serves as the protein source. Recipe down below ????

For Streusel:
60g all-purpose flour
100g sugar
30g chopped almonds
½ teaspoon almond extract
5 tablespoons cold unsalted butter, cut into cubes
For Muffins:
240g all-purpose flour
100g sugar
2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon cardamom
½ teaspoon fine sea salt
280g FAGE Total, FAGE Total 2% or FAGE Total 0%
6 tablespoons unsalted butter, melted
2 eggs
1 teaspoon vanilla
150g blueberries
STEPS:
1. Preheat oven to Gas Mark 5. Line a standard 12-cup muffin tin with paper liners or spray with cooking spray.
2. Streusel: In a medium bowl, whisk to combine flour and sugar. Stir in almonds and extract. Using fingertips, rub butter into almond mixture to form medium clumps. Refrigerate until ready to use.
3. Muffins: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, cardamom and salt. In a separate medium bowl, whisk together Yoghurt with 83ml water. Stir in butter, eggs, and vanilla.
4. Fold flour mixture into wet ingredients, then fold in blueberries. Divide batter between muffin cups, top with streusel and bake until golden brown and a toothpick inserted into 1 or 2 of the muffins comes out clean, about 25 minutes. Remove from oven and let muffins cool for 10 minutes in the pan before serving.
5. Store any leftovers refrigerated in an airtight container for up to 5 days.
