Beer Braised Pork Carnitas Recipe
Follow this recipe for some delicious Beer Braise Carnitas.
Ingredients:
4 pounds of pork shoulder
1 large yellow onion
6-8 garlic cloves
1 dried chili guajillo
1 dried chili chipotle
1 dried chili ancho
2 large oranges
1-2 limes
salt and black pepper
2-3 teaspoons of cumin powder
1 teaspoon of coriander powder
2 teaspoons of 6 chilies powder
2 teaspoons of smoked paprika
2-3 teaspoons of dried oregano or Mexican oregano
2 bay leaves
1 1/2 bottles of beer (Mexican beer or lime beer)

Make this recipe in your Instant Pot or any timed pressure cooker. If you don’t have a pressure cooker and would like to make this in a Dutch oven for similar style pan, cook for 4 to 6 hours.
INGREDIENTS
Carnitas
• 3-5 lb bone in pork shoulder/pork butt
• ¼ cup olive oil
• 3 tbsp Chef Ange Base Seasoning -
• 2 tsp cumin
• 2 tsp ancho chili powder
• 1 tsp smoked paprika
• 1 onion, coarsely chopped
• 8-12 garlic cloves, whole
• 2-4, canned chipotle peppers in adobo sauce, coarsely chopped
• 4-6 cup chicken or beef stock/broth
• 2-3 bay leaves
• 1 tsp dried oregano
Tomatillo Salsa
• 5-8 tomatillo, cleaned and halved
• 1 onion, coarsely chopped
• 1 jalapeño pepper, coarsely chopped
• 2-4 garlic cloves, whole
• small bunch fresh cilantro, lower stems removed
• 1 lime, juiced
• heavy pinch of salt
Quick Pickled Red Onions
• 1 large red onion, thinly sliced
• ½ cup water
• ¼ cup white vinegar
• 1 tbsp sugar
• 1 tsp salt
• ¼ cup shredded cheese per taco
• corn tortillas
• lime wedges & fresh cilantro, for garnish

Carnitas (How To)
There are many ways to make carnitas. We just wanted to give you an easy way to make them inside the home with not much to do.
The orange juice is optional but it does caramelized the meat a bit. Don't brown for too long or the meat can dry. For best results use pork shoulder or butt.

We all have a bit more time to cook as we’re locked insides our home and my family is always down for quick carnitas and spanish rice. You can serve these in warm tortillas with cheese or as burrito bowls – there’s no right or wrong, and it is ALL GOOD. Please feel free to use any kind of toppings you have on hand and don't forget to eat your greens!
