Ingredients
4-6 Chiles Guajillo, California, or New Mexico Chile
1-2 Chiles Pasillas
1 Box of Achiote (3.5 oz)
1 Bay Leaf
1 Tablespoon Mexican Oregano
1/2 Tablespoon Cumin
1 1/2Teaspoon Salt
3-4 Garlic Cloves
1/2 Teaspoon Ginger Powder
1/4 Teaspoon Cinnamon
1/4 Teaspoon Clove Powder or 2 Cloves
10 Pepper Corns or 1/2 Teaspoon Black Pepper
3/4 Cup Apple Cider Vinegar or White Vinegar
1 Cup Orange Juice
1 Can Pineapple juice or 3/4 Cup Pineapple Juice
Optional- Juice of chipotle or a Chipotle Pod
Add 1/4- Cup canola oil when marinading
Protein Marinade Time Recommendation
Pork, Beef, and Chicken - Minimum 12- 24 Hrs
Seafood- 1 Hr
Tofu- Over Night
*Shrimp cooks easily with citrus and vinegar marinade 20-30 Mins
Tips
*If your Chiles are small use the larger quantity recommended
*If you run out of marinade you can add 1 cup of orange juice, 1 Can pineapple Juice, 1/4 Apple cider vinegar to your blend.
*I used marinade all marinade for 6 Pounds of Sliced Pork Butt and 3 Chicken Breast
*My recommendations to adjust the salt to your taste. Other than that, this recipe has a well-balanced flavor and seasoning to satisfy even my picky eater, Oh yeah!

Carne Adovada Recipe
Ingredients:
4 pounds pork shoulder, cut into 1-inch cubes
4 cups red chile sauce (made from dried New Mexico or Anaheim chiles)
1 onion, chopped
4 cloves garlic, minced or garlic powder
1 teaspoon salt
2 cups water
Optional:
1 teaspoon cumin
1 teaspoon oregano
Instructions:
1. Start by making the red chile sauce. Remove the stems and seeds from the dried chile, then soak them in hot water for about 30 minutes. Drain the chile, add onion, garlic, salt, and water (optional cumin & oregano), and blend them in a blender or food processor with enough water to create a smooth sauce.
2. In a large bowl, add the pork cubes into the bowl and pour in the red chile sauce. Mix in the sauce until the pork is well coated with the marinade sauce..
3. Cover the bowl and refrigerate for 24 hours, stirring occasionally to ensure that all the pork is evenly coated with the marinade sauce.
4. After 24 hours, preheat your oven to 350°F.
5. Transfer the pork and marinade to a large baking dish, cover with foil, and bake for 2-3 hours, or until the pork is tender.
6. Serve the carne adovada hot, with rice, beans, and tortillas on the side.
Note: You can adjust the amount of red chile sauce and spices according to your preference for heat and flavor. Also, feel free to use different cuts of pork or add other ingredients to your taste!
