Mix In The Pan Carrot Snack Cake - No mixing bowls needed! - ASMR Cooking
Make this cake without mixing bowls! Here’s a great and easy recipe for delicious, moist, mix-in-the-pan cake! This cake is perfect for snacking because it’s loaded with carrots and satisfies your sweet tooth. You can serve it warm with butter or ice cream on top. When cooled, try it sprinkled with powdered sugar, plain, or with your favorite frosting. Either way, you won’t be disappointed. It’s that good! Try it out and enjoy! The recipe is below. Mix In The Pan Carrot Snack Cake
Preheat oven 350° F
Use an 8-inch square or round nonstick baking pan, ungreased
1 cup flour
3/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon nutmeg
1 1/2 cups shredded carrots
2 eggs
1/2 cup vegetable oil
1/4 cup water
1/2 teaspoon vanilla extract
Bake 25-30 minutes or until toothpick inserted in center comes out clean. Loosen cake around the edges with a dull knife and underneath sides with a rubber spatula. Cool in pan 5-10 minutes before serving.

Carrot Cake Recipe Easy Ingredients | Vegan, Delicious & Healthy Snack Idea
This carrot cake recipe is sooooo good ♡ Super easy to make and the ingredients are healthy! I love my mom's recipe cause it's vegan, healthy and delicious! I like to make this one when I have cravings and I want something sweet and I don't feel guilty. I also like to make home made ice cream to combine it with the carrot cake and it's the perfect combination. I just use some frozen bananas, peanut butter, vanilla extract and I blend everything to make it like ice cream! It tastes so good!
Here are the ingredients for my mom's carrot cake:
1. 2 cups rolled oats
2. 1 cup almond flour
3. 2 tbsp corn starch
4. 2 1/2 tsp baking powder
5. 2 1/2 tsp cinnamon
6. 1/2 tsp ginger
7. 1/2 tsp nutmeg
8. 1/4 tsp salt
9. 1 3/4 almond milk
10. 1 tbsp egg replacer with 1/4 cup water
11. 1/3 cup agave
12. 1 tsp vanilla extract
13. 3/4 carrot pealed and shredded
14. 1/2 cup chopped nuts
15. Chocolate chips unsweetened or dark
Instructions:
1. Preheat oven at 380 F and grease a pan with coconut oil
2. Combine all dry ingredients
3 Add the wet ingredients to the dry mix
6. Add carrots and nuts and mix everything
7. Add chocolate chips ( unsweetened or dark)
8. Bake for 40 mins
9. Remove from the pan
10. Let it cool down for 30 mins and enjoy!!!
