Cheesy Cheddar Cheese Drop Biscuits Recipe - A Perfect Complement to Any Meal
Let’s make these popular, delicious and savory cheddar drop biscuits. They are super simple to make with only a few short steps. The beauty about these biscuits is that there is no need to roll out the dough; just drop them from a large tablespoon, and you are ready to go!

Ingredients for full recipe (16 biscuits):
2 cups all purpose flour (250g)
2 t baking powder
1/2 t baking soda
1 t granulated sugar
1/2 t coarse salt
Pinch cayenne pepper
6 T cold unsalted butter, cut into small cubes
6 ounces sharp cheddar, shredded
1 1/3 c buttermilk, well shaken
3 T chopped chives (optional)
Directions:
Preheat oven to 425 F and line two baking sheets with parchment paper.
In a large bowl, whisk together flour, baking powder, baking soda, sugar, salt, and cayenne pepper.
Work butter into flour mixture with a pastry cutter or your fingers until butter is incorporated into pea-size lumps. Stir in cheddar cheese, then buttermilk, and the dough comes together.
Using a large spoon, drop 1/4 cup amounts of dough onto the prepared baking sheets spaced out at 2” intervals.
Bake in oven until golden brown, 12-14 minutes. Brush with melted garlic butter mixture, and enjoy!
Garlic butter:
2 T butter (melted)
Black pepper
Italian seasoning
Garlic powder
Directions:
Melt butter in microwave at short 10 second bursts. Mix in seasonings, then brush onto the biscuits while warm.

Cheddar Scallion Biscuits
2 Cups All Purpose Flour
2 ½ Teaspoons Baking Powder
½ Teaspoon Salt
1 Tablespoon Butter, Unsalted and Cold
⅓ Cup Lard
¾ Cup Buttermilk
1 Egg, Whipped
½ Cup Cheddar Cheese, Grated
¼ Cup Scallion
Method:
1. Stabilize your grill at 425F and set up for an indirect cook.
2. Sift the dry ingredients together (Flour, Baking Powder, Salt).
3. In a separate bowl, combine your wet ingredients (Buttermilk, Whipped Egg).
4. Using a box grater, cut the cold butter and lard into your dry mix, then use a or pastry cutter or 2 knives to cut in the fat into the dry mix.
5. Add the cheddar and scallions to the mix, then slowly incorporate the wet mix into the dry mix. Mix all until a dough is formed.
6. Turn the mixture out on a slightly floured cutting board. Round the dough and kneed lightly and fold the dough in half several times, then shape ½ inch thick.
7. With a straight push down, use a biscuit cutter and cut out as many biscuits as you can, combining the scraps to get a few more.
8. Slightly grease a cast iron pan and place the biscuits in the pan with the edges slightly touching for a higher rise. Place the pan in the center of the grill and close the dome. Cook for 12 minutes until you have an even rise and fluffy layers.
9. Remove from the grill and enjoy!

Black pepper biscuits!
Black pepper biscuits! I saw this recipe online and I knew there had to be a way to make it for people who don't have fancy mixers, food processors. Plus add our flair to it and make it something everyone can make and enjoy! This is a James Beard's recipients recipe. I thought why not take it over the top?
I used fresh ground black pepper in this recipe and it gave the perfect bite it needed. I made this with a bowl and a pastry cutter. So here you are.
2 cups all-purpose flour
1 tbsp baking powder
½ tbsp sugar
1 tsp salt
3/4 tsp fresh ground black pepper
6 tbsp butter, cut into cubes and frozen
3 tbsp lard, frozen (we use crisco sticks)
1 cup buttermilk cold
2 tbsp melted butter for brushing top of biscuits
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.In a large mixing bowl, combine the flour, baking powder, sugar, baking soda, salt, and pepper and whisk several times to combine. Add the frozen butter and lard mash up butter and lard with pastry cutter or 2 forks , just until the mixture resembles a coarse meal. Add the buttermilk, and stir with a dinner fork or hands until combined. (It will be crumbly, but still very wet in places.) Dust your hands generously with flour, gather the dough while it’s still in the bowl, and work it with your hands until it barely holds together. Be sure to handle the dough lightly, leaving pea-sized pieces of butter scattered throughout.
Turn the dough out onto a floured surface and knead, folding and turning the dough, until it becomes slightly smooth and homogenous, about 5 turns of the dough. Roll out the dough until it’s ¾ inch thick. Cut the biscuits with a 3-inch biscuit cutter. Gather the scraps, knead gently just until the dough comes back together, re-roll, and cut. Discard the scraps. Place on the prepared baking sheet and brush with the melted butter. Bake until golden brown, about 12-18minutes. how ever long it takes your oven to bake golden brown. Serve warm and delicious y'all!

Butter (melted)- 8 Tbsp
Cold Buttermilk- 1 Cup
Cheddar Cheese- 1 1/2 Cup
Chives- 1/4 Cup
Baked in a 425° oven for approximately 10 minutes. Check for crispiness.
