오늘은 뚜레쥬르에서 신메뉴로 출시한 '구운 치즈케이크빵' 을 만들어봤습니다. 제가 살고있는 오타와에는 한국 프랜차이즈 베이커리가 없어서, 파리바게트나 뚜레쥬르에서 먹던 빵들이 그리워지곤 하는데요. 평소에는 간단히 단팥빵이나 꽈배기 정도 도전하는 편인데, 요번 신메뉴 출시를 보고서 '아 이건 만들어봐야겠다.' 라고 생각이 들어 바로 레시피를 연구해 보았어요.
직접 먹어보지 못해서 여러 리뷰들과 영상을 참고하여 장점은 강화! 단점은 줄여서 만들어 보았어요 :)
빵은 더 촉촉하게, 크림치즈는 낭낭하게!
특히 타국에서 생활하느라 한국 빵이 그리우신 분들에게 도움이 되기를 바랍니다.

Today, I made 'Cream Cheese Brioche Bun' which was launched as a new menu by Tous Les Jours in Korea. In Ottawa, where I live, there is no Korean franchise bakery, so I miss the bread I used to eat in Paris Baguette or Tous Les Jours. Usually, I try simple bread, like red bean bread or ggwabaegi, but when I saw the launch of the new menu, I thought, Oh, I should make this, so I tried to make the recipe right away.
I can't guarantee a 100% synchro rate of exact taste because I haven't tried it from the store, but I've checked various reviews and videos to strengthen good points and weaken bad points.
Make the bread moister, and more cream cheese!
Especially, I hope it will be helpful for those who miss Korean bread because they live in other countries.
If you live in Canada, you can buy unbaked Brioche dough at Costco, you can use it after proofing it at room temperature(second proofing stage), make the cream cheese filling, cheesecake topping, and bake it right away and simply enjoy it!

ingredients
250g-300g flour
4g yeast (2tsp)
20g sugar (2 tablespoons)
1 egg
30g butter (3 tablespoons)
80g warm milk
filling
Serve chilled with 120g cream cheese
20g powdered sugar (2 tablespoons)
yellow egg or milk
let the dough rest
in the oven at 170° for 20 minutes
after baking 15g melted butter
glaze
40g powdered sugar
10g lemon or milk
sliced almonds

Ingredients:
1 cup warm milk
1/4 cup sugar divided
2 tsp dry active yeast
4 1/2 cups all-purpose flour
2 tsp salt
5 eggs
Margarine 113g
250g mozzarella cheese – cut to 8 cubes
250g cheddar cheese – cut to 8 cubes
Method:
1. Warm 1 cup of milk to about and add 1 tbsp sugar and 2 tsp of dry active yeast. Give it a
stir and set aside let it become frothy
2. In a mixing bowl, place all-purpose flour, remaining sugar, and salt in your beat bowl
and make a well with a spatula.
3. Pour the yeast mixture and 4 eggs into the flour and beat it slowly with the hook
attachment. Then pick up the speed to high.
4. When no more patches of flour appear add in the sliced 1/2 cup of softened
margarine.
5. Continue to beat the dough for another 10 minutes until it’s formed its shape.
6. Place on a lightly floured surface. It will be very sticky. Shape it into a ball and place it
into a greased bowl.
7. Cover the bowl with plastic wrap and keep in a warm place for one hour.
8. Form the dough into a log and divide it into eight equal pieces.
9. Shape each piece into a ball and stuff it with the cubed cheese, place it on a baking
sheet lined with parchment paper to proof. This should take about 30 to 50 minutes.
10. Brush each bun with egg wash and bake at 170’C for 25-30 minutes or until they are
golden brown.
11. Now do the cheese pull!
