Thanksgiving Side Dishes Recipes
Moraine Park Culinary Arts students provide recipes for side dishes for your Thanksgiving meal.
Apple, Pecan and Bleu Cheese Salad
Ingredients:
Spring greens 12 oz
Dried cherries 4 oz
Pecan pieces 4 oz
Bleu cheese 6 oz
Granny Smith Apples 2 apples
(cored and thinly sliced)
Dressing:
Olive oil 4 fl oz
Dijon mustard 1 fl oz
maple syrup 2 fl oz
Rice wine vinegar 2 fl oz
Salt ½ tsp
Black pepper ¼ tsp
Directions: Add the greens, cherries, pecans, cheese and apples into a large salad bowl.
Mix the olive oil, Dijon, maple syrup and vinegar in a blender and emulsify. Toss with salad.
Creamy Mashed Potatoes (Can make ahead)
Servings: 10
Ingredients:
3 pounds medium potatoes, peeled and cubed
6 bacon strips
1 8z. pkg. cream cheese, softened
½ cup sour cream
½ cup butter cubed
¼ cup milk
1 ½ tsps. onion powder
1 tsp salt
1 tsp garlic powder
½ tsp pepper
1 cup (4oz) shredded cheddar cheese
3 green onions, chopped, including the greens.
Directions:
Place potatoes in a Dutch oven: add water to cover. Bring to a boil. Reduce heat: cool, uncovered, 10-15 minutes or until tender.
Meanwhile, in a skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon: drain.
Drain potatoes: return to pan. Mash potatoes, gradually adding cream cheese, sour cream, and butter. Stir in milk and seasonings. Transfer to a greased 13x9 in. baking dish: sprinkle with cheese and green onions and bacon. Refrigerate covered up to 1 day.
Preheat oven to 350 degrees. Remove potatoes from the refrigerator and let stand while the oven heats. Bake uncovered, 40-50 minutes or until heated through.

Cheesy Beef and Spinach Pasta Bake | One Pot Chef
Nothing beats my Cheesy Beef and Spinach Pasta Bake when you need some comfort food! This easy to assemble pasta bake features classic flavours, simple ingredients and requires minimal effort. Spiral pasta is combined with a delicious tomato, beef and spinach sauce then topped with mozzarella cheese. Baked until golden, this fabulous weeknight dinner will keep everyone happy - Try it today :)
Ingredients:
500g of Lean Beef Mince (or any meat you prefer)
500g of Spiral Pasta (or any small pasta you prefer)
Olive Oil
1 Small Brown Onion (chopped)
2 Teaspoons of Minced Garlic (about 2 cloves)
2 Teaspoons of Dried Mixed Italian Herbs
2 Tablespoons of Worcestershire Sauce
3 x 400g Cans of Diced Tomatoes
Approx. 100g of Baby Spinach Leaves
2 Cups of Grated Mozzarella Cheese or other grated cheese
Salt and Pepper
Preparation Time: About 10 minutes
Cooking Time: About 40 minutes approx.
