How To make Cherry Pecan Logs
2 Tbsp Evaporated Milk -- or more as needed
1/2 Tsp Rum Extract
2 1/2 C Confectioner's Sugar
Combine milk and rum flavoring in mixing bowl. Add sugar and knead in cherries until smooth and shiny. Shape in 6 inch logs, roll in wax paper and chill. Combine caramels (1/2 lb.) and 3 tbs. evaporated milk. Heat over boiling water until melted, stirring often. Turn in pie pan. Roll logs in caramel mixture then in pecans. Roll in wax paper and chill.

Ingredients:
2 teaspoons and 1/2 cup butter divided and softened
3-3/4 cups powdered sugar
1/2 cup non-fat dry milk powder
1/2 cup sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 package (14 ounces) caramels
1-1/2 tablespoon milk
2 cups chopped pecans
Butter an 8-inch square pan with your 2 teaspoons butter and set aside.
To start, combine powdered sugar and milk powder and set aside.
In a saucepan, combine the 1/2 cup butter, sugar, and light corn syrup.
Stir until sugar is dissolved and the mixture just comes to a boil.
Stir in the powdered sugar and powdered milk mixture, a little at a time until blended.
Remove from heat and stir in the vanilla extract. Continue to stir until the mix starts to blend. Spread onto the prepared pan and allow to cool enough to handle, just enough so you don’t burn your fingers.
Cut the candy into four strips and then down the middle. Shape each piece into a log and wrap in waxed paper. Cool until firm or overnight if you want to prep this portion beforehand.
Once the candy is firm you are ready to finish with caramel and pecans. Melt the caramel with the milk in a microwave, or hot water bath. I recommend in a melting pot or double boiler so the caramel can stay warm. It will set quickly. You may add extra milk but it will thin the caramel.
Place your pecans on a plate or any dish you can coat your candy with caramel and then roll in pecans.
Wrap them in waxed paper and store at room temperature in an airtight container.
Unfortunately, ours didn't last very long....

Learn how to make a delicious dessert treat made from a pie-like pastry dough and filled with cream cheese and cinnamon pecans.
Ingredients:
1 1/4 Cups All Purpose Flour (175g)
1 Tablespoon Sugar (12g)
1/2 Teaspoon Salt (3g)
1/2 Cup Cold Unsalted Butter, Cubed (112g)
1 Tablespoon Distilled White Vinegar (15ml)
1 Tablespoon Cold Water (15ml)
1 Tablespoon Sugar (12g)
1 Teaspoon Ground Cinnamon (2.8g)
3 Tablespoons Cream Cheese, Softened (46.5g)
1/2 Cup Pecans, Finely Chopped (56g)
1 Egg
Directions:
1. In a mixing bowl, combine the flour, sugar, and salt. Cut butter into dry ingredients using a pastry blender until crumbs form. Add the vinegar and cold water, mixing until the mixture is crumbly but holds together when squeezed. (If necessary, add 1 more tablespoon of water at a time.)
2. Form dough into a disk and place between two pieces of parchment paper. Roll out to about 1/8 inch thickness.
3. Combine 1 tablespoon sugar and cinnamon. Sprinkle over rolled out dough and gently press into dough using the rolling pin. Refrigerate dough 20 to 30 minutes.
4. Spread the cream cheese evenly over the dough. Top with the finely chopped pecans.
5. Cut dough in half and carefully roll each half into a log. Brush the tops of each log with a beaten egg. Cut into 1 inch thick pieces. Place pieces on a parchment lined baking sheet. Bake in a preheated oven at 400°F for 15 to 20 minutes or until golden brown.
