Chewy Coconut Macaroons - Everyday Food with Sarah Carey
If I'm short on time and ingredients, but still want to bake, coconut macaroons are always a good bet! They're basically the exact opposite of the French macarons [LINK: we made last week because they're impossible to mess up!

The ingredient list is simple: egg whites, granulated sugar, shredded coconut, vanilla extract, and a pinch of salt. I'll wait while you gather those items from your cabinet... Okay, ready? Makes about 18
Ingredients
2 large egg whites
1 tablespoon granulated sugar
2 1/2 cups sweetened shredded coconut
1 teaspoon pure vanilla extract
Pinch of salt
Directions
Preheat oven to 325 degrees. Line a baking sheet with parchment paper. In a large bowl, whisk together egg whites and sugar until foamy. Add coconut, vanilla, and salt. Mix well to combine.
Form coconut mixture into 1 1/2 tablespoonful mounds; place on parchment-lined baking sheet about 1 inch apart.
Bake until golden brown, 16 to 17 minutes, rotating halfway through. Let cool on a wire rack.

Cookies can be stored in an airtight container at room temperature for up to 3 days.

Chewy Coconut Cookies
These cookies are chewy and crunchy, delicious!
Ingredients:
1 cup of flour
1/2 tsp of baking soda
1/2 tsp of baking powder
1/2 cup (1 stick) of softened butter
1/2 cup of brown sugar
1/2 cup of granulated sugar
1 egg
1 tsp of Vanilla extract
1-1/2 cups of sweetened shredded coconut
Bake at 350 for about 12 minutes, turning pans halfway through

Chewy Coconut Cookie Bars
Chewy coconut cookie bars. Coconut dream bars. Magic cookie bars. Hello Dolly bars. Whatever you call them, they are one of my favourite desserts ever! They are chewy, crunchy, smooth, creamy, salty and sweet. Everything you want in a dessert!! They are super easy to make and use limited ingredients. They freeze well and are great to have in the freezer when you need a sweet treat.
Recipe:
2 cups digestive biscuits (or graham wafer)
1/4 cup white sugar
1/2 cup melted butter
1 can sweetened condensed milk (300ml - 14oz)
2 cups unsweetened dessicated coconut
1 1/4 cups of chocolate chips
3 tbsp milk
