4 large chicken breasts
skin left on 5 tbsp olive oil 150 g mozzarella cheese :
drained and cubed 1/4 tsp dried rosemary
...or... 1 small fresh rosemary sprig, divided into leaves :
plus extra garnish 4 slices cooked ham or prosciutto crudo
cut into thin strips wooden cocktail sticks :
to secure 1/2 glass dry white wine salt and freshly ground black pepper
GARLIC, TOMATO AND BASIL SAUCE :
3 tbsp olive oil 2 cloves garlic
peeled and crushed 400 g can premium chopped tomatoes 9 fresh basil leaves :

Keto Chicken Spinach and Ricotta Lasagna
This meal can be used for the Keto or Low Carb diet. Just ensure to compensate your other nutrients throughout the day to reach your nutrient goals. For the lasagne noodles you can use bacon to increase the fat content, or ham for low carb. If you want to make this for the family as well just replace the bacon/ham with any cooked lasagne noodles.

Ingredients for 12 Servings: Red Sauce: 1 kg Chicken Thighs, diced 6 tbsp Butter 2 tbsp Garlic, minced 4 tbsp Oregano, dried 4 tbsp Basil, dried Salt & Pepper to taste 500g Marinara ½ cup Water 2 tbsp Tomato Paste 1 cup Water
White Sauce: 500g Frozen Spinach, thawed and drained 2 x 375g Ricotta Cheese 300g Cream Cheese 2 Eggs Pepper to taste
Lasagna Noodles: About 500g Bacon Optional: Olive Oil for frying
Assembly: 350g Cheddar Cheese Garnish: Oregano
Ingredients for 6 Servings: Red Sauce: 500g Chicken Thighs, diced 3 tbsp Butter 1 tbsp Garlic, minced 2 tbsp Oregano, dried 2 tbsp Basil, dried Salt & Pepper to taste (optional) 250g Marinara ¼ cup Water 1 tbsp Tomato Paste ½ cup Water
White Sauce: 250g Frozen Spinach, thawed and drained 1 x 375g Ricotta Cheese 150g Cream Cheese 1 Egg Pepper to taste
Lasagna Noodles: About 250g Bacon Optional: Olive Oil for frying
Assembly: 175g Cheddar Cheese Garnish: Oregano
