1 whole Chicken (cutup)
4 cloves Garlic (halved)
2 Onions (sliced)
4-6 Scallions (Green Onions) - bottom portion
1/2 cup Parsley

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.

I’ve been listening to you all and I keep hearing more family meals, so enter stage right this chicken cacciatore recipe.
I love this chicken cacciatore recipe not only because it’s Italian but because it’s a classic recipe that is so delicious.
I can’t lie, I’m starting to get nervous that we’re losing these traditional recipes like chicken cacciatore.
People now-a-days are taking these old traditional recipes and adding in all sorts of crazy stuff and saying it’s authentic.

Ingredients for this Authentic Chicken Cacciatore Recipe
• ¼ cup of reconstituted dried porcini mushrooms
• 1 whole chicken broken down into parts
• 2 tablespoon olive oil
• ½ peeled and small diced yellow onion
• 3 small diced ribs of celery
• 2 peeled and small diced carrots
• 4 finely minced cloves of garlic
• 1 cup each sliced baby portabella and button mushrooms
• 1 cup of dry red wine
• 2 28-ounce cans of whole peeled tomatoes
• 1 tablespoon of chopped fresh parsley
• 1 ½ teaspoons of chopped fresh rosemary
• sea salt and fresh cracked pepper to taste
serves 5
prep time: 20 minutes
cook time: 50 minutes
procedures:
1. Porcini mushrooms: pour 2 cups of boiling water over top a ½ ounce of dried porcini mushrooms and sit for 20 minutes.
2. Finely strain the mushrooms and reserve ½ of the liquid.
3. Rinse the mushrooms, squeeze out all of the liquid and roughly small chop.
4. Season the chicken parts well on all sides with salt and pepper.
5. Heat the olive oil into a large rondeaux pot over medium heat and brown the chicken parts well on each side, about 4 minutes per side.
6. Remove the chicken and set aside.
7. Next, add the onions, celery, carrots, garlic, and mushrooms to the pan and sauté for 6 to 7 minutes.
8. Deglaze with the wine and cook over medium heat until it is almost gone, about 5 minutes.
9. Pour in the reserved porcini mushroom liquid, tomatoes, herbs, salt and pepper and stir.
10. Add the browned chicken back in and add a lid to the pot and simmer over low heat for 25 to 30 minutes.
11. Garnish with chopped parsley.

6 medium chicken thighs bone in skin on or 4 lb/1.8 kg whole chicken cut up
½ cup flour
Salt and pepper to taste
4 tbsp olive oil
1 large yellow onion
1 large red bell pepper or different colors
½ tsp dried oregano
4 cloves garlic grated - 1 tbsp
½ cup dry red wine or white wine (sub ¼ cup red wine vinegar, ¼ cup water, 1 tbsp sugar)
28 oz/830 ml crushed tomatoes
½ cup chicken stock
½ tsp salt
1 tsp dried oregano
½ tsp red chili flakes
½ tsp dried rosemary or 1 tsp fresh
½ tsp dried sage or 1 tsp fresh (optional)
8 oz mushrooms sliced
½ cup oil cured black olives
Basil leaves if you can get it

Learn how to make this easy to make chicken cacciatore recipe. This isn't completely traditional with the absence of a couple of ingredients but I feel this combination of flavours is perfect. Cacciatore means hunter or hunter style and is traditionally made with chicken or rabbit and in this instance we use chicken.

Ingredients -
2 1/2 Tbsp (50ml) - Unrefined Olive Oil
5-6 - Large Chicken Thighs, Bone In & Skin On (Boneless & Skinless Is Fine Too)
2 - Brown (Yellow) Onions, Diced
5 - Garlic Cloves, Crushed & Roughly Chopped
1 - Large Red Bell Pepper (Capsicum), Thinly Sliced or Diced
2 - Carrots, Washed & Thinly Sliced
250g (8.8oz) - Button Mushrooms, Thinly Sliced
5g (0.3oz) - Thyme
7g (0.25oz) - Flat Leaf Parsley, Roughly Chopped
7g (0.25oz) - Basil
1 tsp (0.5g) - Dried Oregano
1 tsp (0.5g) - Dried Rosemary
3 - Dried Bay Leaves
1/2 Cup (125ml) - Red Wine or Chicken Stock
3 Tbsp (42g) - Concentrated Tomato Paste
2 1/2 Cans (1kg) - Canned or Diced Tomatoes

Notes -
This recipe can contain olives but I feel it's unnecessary in this dish and the flavour is overpowering. If you wish to add olives, add in 100g of halved & pitted kalamata olives.
