Ingredients:
15 corn tortillas
Oil
Cheese
5 Roma tomatoes
Jalapeños or Serrano peppers, (I’m using 2)
Chile árbol, (I’m using 6)
1/4-1/2 cup water
1/4 onion, sliced into moons
2 garlic cloves
1/4 tsp whole cumin
1/4 tsp black pepper
Salt

Pasar por un corazón roto es como hacer chilaquiles, según los inventos de la señora Marta. Un metro cincuenta, arrugada y con más canas que ganas de vivir. A algunos se les contagiaba su amargura, pero sus ocurrencias no traspasaban la fuerte barrera de mi paz mental. Entonces me veía fijamente y decía:
Romperse en trozos como la tortilla de maíz, fingir sonrisas, secar lágrimas de cebolla, repetir. Seguir con la cara en alto, los hombros atrás, actuar —y licuar— con seguridad, repetir. La salsa quedó muy picante, muy salada o tu relación ya no funciona. Porque unos buenos chilaquiles requieren de un sazón particular entrenado con el tiempo… pero la siguiente vez que los hagas no te descuides y sobre todo no te ilusiones. Porque la historia se repite; así como se repite con los romances tóxicos.
La señora Marta hablaba como bruja y sus reflexiones eran muy rebuscadas para mí. Yo solo pensaba que vivir sin ilusiones te sentencia a una vida sin amor y sin buenos chilaquiles. Prefiero secarme las lágrimas, ponerme el delantal y cocinar con la esperanza de tener éxito esta vez. Y lo mismo pasa con los corazones rotos. Sécate las lágrimas, ponte el vestido y sal con la esperanza de tener éxito esta vez.

Jalapeno Crema:
- 2 jalapenos, charred and skinned
- 1/4 cup water (60g)
- 4 cloves garlic
- 3 tablespoons vegetable oil (68g)
- 1/4 cup sour cream (52g)
- 1/2 cup mayonnaise (120g)
- Salt to taste
Chilaquiles Rojos:-
-4 guajillo chilies
- 3 ancho chilies
- 1/2 yellow onion diced
- 2 serrano chilies sliced
- 5 cloves garlic rough chopped
- 28 oz can crushed san marzano tomatoes
- 1.5 cups chicken stock (335g)
- 2 teaspoons mexican oregano
- Salt and pepper to taste
-14 yellow corn tortillas cut into wedges
-1 Avocado, diced
- Cotija cheese for topping *queso fresco is traditional*
- Cilantro for garnish
- 4 Eggs, poached
Chilaquiles Verde:
- 4 chicken thighs, boneless skinless cooked and shredded
- 12 yellow corn tortillas cut into wedges
- 1lb (450g)tomatillos
- 2 serranos
- 2 jalapenos
- 1/2 sweet onion
- 1/2 bunch cilantro
- 7 cloves garlic
- Juice of 1 lime
- Salt to taste
- Sour cream
- Cotija
- Fine chopped cilantro
- Pickled jalapenos
- 4 eggs, fried
