Do you ever what to do with your leftover chili? Try this quick and easy Cincinnati chili hot dog casserole. Delicious homemade Cincinnati chili topped with hot dog chunks, biscuits, cheddar cheese and spices then baked until piping hot and bubbly. Great for any occasion. Hope y’all enjoy!
Shopping List:
Serving: 1 small 5 inch skillet (adjust recipe amounts as needed)
3 hot dogs
½ cup shredded cheddar cheese
½ cup parsley
2 cups chili with no beans. (you can substitute your favorite canned chili rather than making the recipe below)
1 small can of biscuits
1 tbls. butter
1 tsp. garlic powder
Cincinnati Chili Recipe: (This recipe makes 6 cups cooked chili. Use in other dishes throughout the week or freeze)
2 Lbs. 80/20 ground chuck
1 chopped medium white onion and more for garnish on serving
3 chopped garlic cloves
½ quart beef stock
2 tbls. apple cider vinegar
2 tbls. Worcerstershire
1, 6 ounce can of tomato paste
1 tbls. Chili powder
1 tbls. cayenne pepper
1 tbls. ground cumin
1 tsp. all spice
1 tsp. cinnamon
1 tsp. oregano
2 tsp. kosher salt
1 tsp. course black pepper
2 tsp. unsweetened cocoa
Directions:
Add the beef stock, onions and garlic to a large sauce pot. If you don’t have beef stock you can use water.
Bring the mixture to a high simmer over medium high heat then reduce the heat to medium to medium low and simmer for 30 minutes to 1 hour. You want the onions and garlic to really infuse the beef stock or water with flavor. (If you’re pressed for time you can skip this simmering step and add the meat to the mixture, but simmer for 2 hours)
After simmering the stock/water, add the ground chuck and mince up until it is very fine with a spatula or tater masher.
Add the vinegar, Worcestershire, tomato paste and the spices. Simmer for two hours.
Set aside.
Cut the hot dogs into 1 inch chunks.
Cut each biscuit into bite size piece.
In a bowl add the biscuits, cheddar cheese butter, garlic powder and parsley. Mix well.
Pour about 1 inch of the chili in the skillet.
Add the hot dogs to the chili and mix.
Top with the biscuit mixture.
Bake at 350 degree for 15-20 minutes until the biscuits are golden brown.
