I find that using canned corn and heating in the microwave most convenient but you can also heat this on the stove top. The toppings of Mexican lime chili seasoning, fresh squeezed lime, mayonnaise, Mexican table cream and cotija cheese make this so wonderful. This is a great Mexican street food recipe you can make at home.

INGREDIENTS
15.25 oz can of sweet golden corn (drained)
2 Tbsp butter
1 1/2 to 2 Tbsp mayonnaise
1 Tbsp Mexican table cream
squeeze of fresh lime juice
1/2 tsp Tajin chili lime seasoning
1 to 2 Tbsp crumple Cotija cheese (or grated parmesan cheese)

Queso Fresco, Medium Cheddar, Or long Horn Cheese (Desired Amount)
Roasted Anaheim Chile (Desired Amount)
Save Fresh Corn Husk to wrap tamales

Ingredients:
Corn
Cojita Cheese
Mayo
Butter
Chilli Powder
Chili & Lime
Cilantro
Directions:
1. Boil corn and allow them time to cool
2. Place skewer into the bottom of the corn
3. Melt 3 tablespoons of butter
4. Brush corn with melted butter
5. Brush corn with mayo
6. Roll corn in cojita cheese
7. Season with chili powder and chili & lime seasoning
8. Top with cilantro
9. Enjoy!
