Chinese beef stew recipe - How to prepare (the authentic way)
The best Chinese style beef stew 柱侯蘿蔔炆牛腩 I have ever tasted was at an old school coffee shop in Aberdeen, Hong Kong. They cooked by the traditional way, nothing fancy, but did it exceptionally well.
After a few months of not enjoying the beef stew, I am tempting to develop my version since I do not visit Hong Kong very often.
Here is the recipe, following strictly to the original Cantonese flavor.
Serve with a bowl of noodles on the side, and it is heavenly.

INGREDIENTS:
900g Flank Steak
2 each Red and Green Bell Peppers
1 Onion
SLURRY:
400ml Beef Stock
1/4 Cup Soy Sauce
2 tbsp Rice Wine
1 tsp Sesame Oil
3 tsp Brown Sugar
1 tsp Black Pepper
1/2 tsp Sesame Oil
1 tsp Garlic Powder
1 tsp Ginger Powder
MEAT MARINADE:
2 Stock Cubes (I used Knorr Chicken Cubes)
1/4 Cup Soy Sauce
3 tbsp Corn flour
1 tsbp Minced Garlic
1 tbsp Minced Ginger
1/3 Cup Honey
2 tbsp Vegetable Oil
1/2 tsp Sesame Oil
1 tsp Black Pepper

It’s not just the cut of meat that determines how tender it is, it’s also how you cut the meat. First, find the direction of the grain (which way the muscle fibers are aligned), then slice across the grain rather than parallel with it. By cutting against the grain, we want to cut through the fibers and shorten them, rather than cut in the same direction that they run.

Chinese Beef Stew with Potatoes 土豆炖牛肉 Recipe
Welcome to Mama Liu's Kitchen for easy, authentic homestyle Chinese food recipes. Here's Mama Liu's Chinese Beef Stew with Potatoes 牛肉炖土豆 Recipe
Ingredients
- 1 lb beef stew
- 1 big potato
- 1 carrot
- 2 green onions
- 1/2 head onion
- 1 tbsp ginger
- 1 tbsp garlic
- 1 star anise
- 5 peppercorns
- 2 tbsp wine
- 1 tbsp bean paste
- 1 tbsp oyster sauce
- 1/2 tsp white pepper
- 1 tsp sugar
- 1 tbsp soy sauce
- 1 tsp salt
- 1 tsp sesame oil
Directions
- Clean and chop 1lb beef stew into cube, 1 big potato into diamond shape, 1 carrot into diamond shape .
- Clean and chop 1/2 head onion, 1 tbsp ginger, 1 tbsp garlic, 2 green onions.
- Boil beef with 1 tbsp wine starting cold water about 2 minutes, then wash and drain the blood foam, ready to use.
- Pour 2 tbsp cooking oil in wok, add 2 green onions, 1/2 head onion, 1 tbsp ginger, 1 tbsp garlic, 1 star anise, 5 peppercorns, stir every 2 mins. Add meat, 1 tbsp wine, 1 tbsp bean paste, 1 tbsp oyster sauce, 1/2 tsp white pepper, 1 tsp sugar, stir for 2 minutes, then add 1.5 cup water, boil about 10 minutes at medium heat cover with lid.
- After 10 minutes, add potatoes, carrots, 1 tbsp soy sauce, 1tsp salt, stir, boil for about 20 minutes at medium heat with lid.
- After 20 minutes, use high heat cooking for last 1-3 minutes, add 1 tsp sesame oil stir well, ready to serve!
