How To make Chocolate Date Log
-Nancy Speicher DPXX20A 1 lb Pitted dates
2/3 c Walnuts; coarsely chopped
1/4 c Candied red cherries;chopped
5 Pieces candied ginger
-finely chopped (3 tb) 2 tb Sugar
4 oz Semisweet chocolate squares
1 c Walnuts; chopped
1. Grind dates through finest blade of meat grinder, or chop very
fine in blender or food processor. 2. Combine dates, 2/3 c nuts, the candied cherries and ginger. Turn
out on breadboard sprinkled with sugar. Knead with hands to blend thoroughly. 3. Form into a roll, 2" thick & about 9" long. Wrap in waxed paper;
refrigerate at least 1 hour before coating with chocolate. 4. In top of double boiler, melt chocolate over hot, not boiling,
water. Pour over date roll, spreading to coat evenly all over. Roll in chopped walnuts. Refrigerate until chocolate is hard. 5. To serve, cut into thin slices. Makes 1 log, about 1 3/4 lbs.

This date roll is so tasty and nutritious. They make a great pre workout snack as well welcoming sweet for guests.

Ingredients
Nuts
¼ cup almond chopped
¼ cup cashew chopped
2 tablespoon pistachio chopped
2 tablespoon walnuts chopped
Other
2 tablespoon sesame seeds
2 cup pitted dates about 30, roughly chopped
½ tablespoon butter or ghee
¼ cup raisins
½ teaspoon cardamom powder
Instructions
Take all the chopped nut in a pan and dry roast for 30 second on medium heat until lightly toasted. Add sesame seeds and roast for another few seconds. Remove nuts to a plate and set aside.
In same pan add butter and chopped dates. Cook on low heat for 2 minutes until soft keep mixing with spatula. Add raisin, roasted nuts and cardamom powder to dates and cook further for a minutes. Remove from heat.
Let the mixture cool enough to handle. Then mix further with hands (if needed).
Remove dates mixture on cling wrap and roll it into a log. Keep log in fridge and cut slices of date as required. Serve cold.
Tips
You can also roll them into ball instead of a bar.
You can add any nuts of your choice just remember to keep the ratio of dates and nuts 2:1. That is two part of pitted and chopped dates for 1 part of mixed nuts or you can soak dates for a few second in water to get softened. But do it only if your date are very chewy and hard.
If your dates are too dry you may add a little extra ghee or butter during cooking of dates to soften.
If your dates are too moist and soft. You may add 1-2 tablespoon spoons of crushed wheat biscuits to make it denser and easy to roll.
Use best quality dates.
Other options for add on are wheat biscuits, chocolate, cocoa powder, roasted poppy seeds, roasted oats and pine nuts etc.

HOW TO MAKE DATE COOKIES
This Date cookie recipe using chopped dates can be made in a very simple method ,just like how we make a chocolate chip cookies.
Cream the butter and sugar.
Add egg ,vanilla extract and coffee powder and mix until if forms a thick and uniform mixture.
Add the flour, baking powder and salt.
Combine them all together.Take care not to overmix the batter.
And just when the batter come together, add the chopped dates and mix to form a homogenous date cookie dough.
Once the dough is ready,take small portions (1 tablespoon scoop dough) using a spoon or an ice-cream scoop and place it onto the baking tray lined with a parchment paper or onto a non stick baking tray.
Leave a little room(1 inch space) between each ball of date cookie dough, as they will spread a little while bake.
Bake the date cookies at 350F or 180 C preheated oven for 16-18 minutes.

Ingredients for chocolate date and nut kielbasa recipe:
- 12 large medjool dates (~1 cup packed), pits removed and briefly soaked in hot water to soften if needed
- 1/2 cup salted roasted almonds
- 1/2 cup roasted pistachios
- 1/4 cup dark chocolate chips
- pinch of salt
- enough toasted sesame seeds to coat (you can also use shredded coconut)
Directions for making chocolate date and nut kielbasa:
- add dates, nuts and chocolate chips into food processor and blend until everything comes together into a big clump. It's normal to have some chunky pieces, but the dates should form a paste and most of the nuts should be processed into smaller pieces.
- dump out the mixture onto a piece of parchment paper or plastic wrap and mold into a sausage shape
- roll the log in toasted sesame seeds (or coconut) until it is coated on all sides
- roll the finished kielbasa in plastic wrap (or a clean piece of parchment paper), twist ends, and place into freezer for several hours or overnight, until it is firm
- let thaw for 5-10 minutes before slicing thinly and serving

* 100g caster sugar
* 4 x large free range eggs
* 40g cocoa powder
* 65g self raising flour
Ganache:
* 200ml double cream
* 300g cooking chocolate
Filling:
* 300ml double cream
* 2 tbsp caster sugar
Baking:
Bake in a pre heated oven at 200FAN for 10 mins
