Try these refined sugar free nutty dates roll this Ramadan. These rolls are packed with soft and chewy dates, roasted nuts with an amazing aroma of green cardamom. It is very easy to make, super quick but healthy and indulgent. It’s your energy booster so excellent for Iftaar time in Ramadan. It’s your guilt free snack-between-meals and satisfy your sweet tooth craving for sure.
INGREDIENTS:
•500g (2&1/2cup) good quality soft dates
•3 tbsp clarified brown butter (caramelised desi ghee),(or simply unsalted butter or coconut oil for vegan option). *Divided
•1/2 tsp Cardamom powder
•2 & 1/2 tbsp Sesame seeds, Divided
•2 tbsp Desiccated coconut
•1/4 cup Almonds
•1/4 cup Walnut or Pecans
•1/4 cup Pistachio plus more for rolling
•1/4 cup Cashew
*You can add any nuts or seeds of your choice but keep in mind, the ratio between dates and nuts should be 2:1.
DIRECTIONS
1. Start by dry roasting sesame seeds and set aside. Dry roast desiccated coconut.
2. Roughly chop all nuts, and roast them in 1 tbsp clarified brown butter on low heat for about 1 minute.
3. Chop the pitted dates. Melt the 2 tbsp brown butter in the same pan and add chopped dates. Cook on low heat for 4-5 minutes or until you have softened and mashed mixture, keep mixing with a spatula or wooden spoon.
4. Add in the roasted nuts, cardamom powder, 1 tbsp sesame seeds and desiccated coconut, mix well to combine(1 minute).
5. Turn off the heat and let the mixture cool enough to handle(1 minute only).
6. Grease your hands with oil for easy handling. Transfer the date mixture on a parchment paper. Roll into a log and divide into two equal logs.
7. Roll the each log in sesame seeds and chopped pistachio.
8. Wrap the each log separately in parchment paper tightly.
9. Pop in the fridge for 1-2 hrs or until firm.( I kept it overnight)
10. Cut into slices using sharp knife. Serve cold.
STORAGE
Store them in an air tight container with butter paper in between. It can last up to 3-4 weeks in the fridge.

This Date roll recipe will steal your heart and is perfect for any festive celebration like Christmas, Easter, deevali, new year or Eid. What makes this date log even more amazing is that it has no gluten, no eggs, and no sugar.
a date roll or dates roll is a log of dates and nuts rolled tightly with the help of baking paper or cling wrap. The log is then cut into slices like salami and served.
You can also roll it into a bar and cut it like date candy. It can be eaten as energy bites or snacks.
This homemade date roll makes a healthy candy because it is naturally sweetened with dates and enriched with nutrients from nuts; these make a great pre-workout snack for instant energy.
They are also called date log, date candy, almond date roll or dates salami, and dates burfi.
DATES VARIETY
The main ingredient of this recipe is the dates so try to use Medjool dates of good quality. The taste depends on the taste of dates. We want chewy, soft dates for this recipe.
If your dates are mushy soft, the roll will not form properly and you have to add crushed biscuits or desiccated coconut to absorb moisture.
If your dates are too dry and dense then add little moisture by soaking dates in water for 5 minutes. So try to select the best dates for this date roll recipe
NUTS
Our second main ingredient in this recipe. I've shared a common ratio of nuts to my liking. A variety of nuts help adds a variety of nutrients to our diet. You can substitute any nut with others and add more nuts too like pine nut and pecan.
GREEN CARDAMOM
I'm using green cardamom (elachi) in this recipe for that amazing aroma. Other flavors that can enhance the aroma of date roll are vanilla, saffron, cinnamon, and orange zest. Instead of cardamom powder, you can add any of these.
HEALTHY SEEDS
I'm using poppy seeds which are easily available and taste great. But you can use this recipe as a base to add any neutral flavor seeds to your diet like melon seeds, flax seeds, chia seeds, or sesame seeds.
HOW TO MAKE IT?
So this is a simple recipe, it has bare minimum cooking to roast nuts and melt dates. You can actually do it in the oven too but the stovetop is so simple and done in minutes without burning.

TIPS FOR VARIATIONS☝️????♀️
Variations for this recipe are endless, you can fully customize it with the aroma of your choice. I have provided a recipe that I'm familiar with. But can make as many variations as you like and steal the recipe. ????
Roll the date and nut mixture into balls instead of a log and coat it with desiccated coconut, biscuit powder, or rice crispies, or anything.
You can add any nuts of your choice just remember to keep the ratio of dates and nuts to 2:1. That is two parts of pitted and chopped dates for 1 part of mixed nuts.
Some spices that can enhance the aroma of date roll are cardamom, saffron, cinnamon, orange, or lemon. Instead of cardamom powder, you can add any of these spices or zest.
Other options for add-ons are wheat biscuits, chocolate, cocoa powder, roasted sesame seeds, roasted oats, pine nuts, etc.

This is a real winter treat & I loveeee all things chocolate so I hope you enjoy this recipe.
Ingredients
Sponge:
* 100g caster sugar
* 4 x large free range eggs
* 40g cocoa powder
* 65g self raising flour
Ganache:
* 200ml double cream
* 300g cooking chocolate
Filling:
* 300ml double cream
* 2 tbsp caster sugar
Baking:
Bake in a pre heated oven at 200FAN for 10 mins

Slimming World choc 'n' date brownies recipe - 5 Syns per Brownie

Makes 16 brownies
5 Syns per brownie
2 large brown-skinned sweet
potatoes (about 500g), peeled and diced
100g porridge oats
3 level tbsp sweetener
1 medium egg
12 dried medjool dates, stoned and roughly chopped
2 level tbsp low-fat spread
6 level tbsp cocoa powder (or raw cacao powder, available in larger supermarkets)
16 raspberries
1 level tsp icing sugar, to dust
Preheat your oven to 180°C/fan 160°C/gas 4 and line the base and sides of an 18cm square loose-bottomed cake tin with non-stick baking paper.
Microwave or steam the sweet potatoes for 10 minutes or until tender (use a steamer or put them in a covered colander placed over a saucepan of boiling water and steam over a high heat). Leave to cool slightly.
Put the oats into a food processor and blitz until you have fine crumbs. Add the sweetener, egg, dates, spread, cocoa powder, cooked sweet potatoes and a pinch of salt, and whizz to a thick, smooth paste. Pour into the prepared tin, level the surface and carefully poke in the raspberries (placing them so that each brownie will get 1 raspberry). Bake for 35 minutes then leave to cool in the tin.
Turn out on to a board then peel away and discard the baking paper.
Cut into 16 squares and dust with the icing sugar to serve.
