How To make Chocolate Shortbread Logs
2 c All-purpose flour
1 c Butter; (2 sticks) softened
1/2 c Sifted powdered sugar
1 ts Vanilla
1 pk Semisweet chocolate chips
; (6-oz) 1 tb Shortening
1/2 c Walnuts; finely chopped
Recipe by: St. Louis Post-Dispatch 12/2/96 Preheat oven to 350 degrees. In a large bowl, combine flour, butter, sugar and vanilla. Blend thoroughly. Using a rounded teaspoon of dough for each cookie, shape with hands into 2-inch logs. (To make shaping easier, you can coat each piece of dough very
lightly with powdered sugar.) Place 1/2 inch apart on an ungreased cookie sheet. Bake for 10 to 13 minutes. They should be barely golden brown on the bottom. Carefully remove cookies to a wire rack. Hot cookies are very fragile. Let cool thoroughly. Heat chocolate chips and shortening together in the microwave on a low power level until just melted. Stir to combine. Dip ends of each cooled cookie into chocolate. Place on a cookie sheet lined with waxed paper. Sprinkle walnuts over ends. Chill until firm, about 1 hour. Tester's note: Elegant, rich and delicious. Shortbreads are one of my favorite cookies. I love their crisp and crunchy texture and their buttery flavor. A basic shortbread recipe uses just three ingredients, butter, sugar, and flour. For this recipe we are adding chocolate chips which add a pleasing contrast to the buttery sweet flavor of the shortbread. Unlike some of the other shortbread recipes on the site, that involve rolling and cutting out the individual cookies, this is a slice and bake cookie. Which means we simply make the batter, form it into a log shape, chill, and then slice and bake the cookies. The cookie log can even be frozen which makes it an ideal make ahead cookie.

Chocolate Shortbread Cookies
In a large bowl: Whisk together
2 Cups flour
¼ cup cocoa powder
Pinch of Kosher Salt
In a large bowl: Combine the wet ingredients
1 cup unsalted butter (room temperature)
2/3 cup confectioner’s sugar
1 teaspoon double strength vanilla
Add dry ingredients to wet ingredients. Shape into log. Wrap with plastic. Refrigerate for 2 hours.
Preheat oven to 325° F (165° C). Cut dough into ¼” rounds. Place on parchment lined cookie sheets. Bake for 18-20 minutes. Let cool completely.
Drizzle: 2/3 cups semi-sweet chocolate chips melt in microwaveable bowl. Drizzle or dip the cookie in the chocolate. (Optional)

Ingredients:
2 sticks (1 cup) soft, room temp. Unsalted Butter
2 cups of All Purpose Flour
3/4 cup MINI chocolate chips
3/4 cup powdered sugar
1/2 tsp table salt
1/2 tsp vanilla extract
Directions:
In a mixer combine the butter and powdered sugar. Beat until smooth (about 3 min.). Add vanilla, salt, and flour. Beat until the batter barely comes together. Do not overmix. Remove the bowl and mix in the chocolate chips with a spatula. Lay out a sheet of plastic wrap on the counter/workspace and scoop out half of the batter. Roll it into a log and repeat for the rest. Wrap well and chill it in the fridge for about 2 hours. This will help keep the batter stiff, making it easy to slice. Once the dough has been chilled, preheat your oven to 325ºF. Slice your dough into 1/2 thick slices and arrange on a parchment paper lined baking sheet. Bake 12-15 minutes until crispy and lightly browned. Remove the cookies, let it cool for about 10 minutes, and enjoy!

I wanted to make a homemade version of these cookies. In this recipe, I achieve a pretty similar taste and I really enjoyed eating them!
