How To make Chocolate Toffee
1 c Sugar
2/3 c Light corn syrup
1 1/2 c Half-and-half
1 1/2 oz Unsweetened chocolate
- melted 1 1/2 ts Vanilla
1 pn Salt
COMBINE THE SUGAR, CORN SYRUP, and 1/2 cup of cream in a large saucepan set over moderate heat. Stir the mixture until the sugar dissolves completely. Insert a candy thermometer, reduce the heat to low, and cook the syrup, stirring frequently, until the thermometer registers 238F. Blend in another 1/2 cup of the cream, which will cause the temperature to drop, and
continue to cook and stir until the thermometer reaches 236F or until a bit of the hot toffee dropped into a little cold water forms a soft, pliable ball. Mix in the remaining 1/2 cup cream and the melted chocolate. Cook the toffee, stirring constantly, lest it scorch. Cook toffee until the mixture becomes quite thick: A drop of it should firm up quickly in cold water. (NOTE: Even though the temperature of the toffee may not exceed 230F, if it firms in cold water, remove the pan from the heat at once.) Quickly mix in the vanilla and salt, then pour the toffee into a well-buttered 8-by-8-by-2-inch pan. Cool the toffee completely, then cut it into 1-inch
squares. Wrap each one in waxed paper or plastic wrap.

Dark Chocolate Almond Toffee Recipe
If you like your desserts both sweet and salty, this toffee is the treat for you. Crispy from perfectly cooked sugar and toasty almonds, smooth from butter and dark chocolate, and finished with flaky sea salt, it’s greater than the sum of its parts.

Recipe:
2 Cups Sugar
1/2 Cup Light Corn Syrup
1/3 Cup Water
1 Tbsp. Baking Soda
Dark Chocolate
Sea Salt/Maldon Salt
Candy Thermometer
Line a 9 inch baking tray with parchment paper and grease thoroughly.
Set aside a metal whisk and 1 Tbsp. of Baking Soda.
In a LARGE saucepan (bigger the better - as this will more than triple in size) over medium/high heat - combine sugar, corn syrup, and water. Stir to incorporate then leave to boil. Insert candy thermometer and continue to heat - without stirring - until the mixture reaches 300˚F (150˚C). Remove from heat and - working quickly - add the baking soda and quickly whisk into the sugar syrup (whisking for no more than 5 seconds - to prevent deflating the toffee). The mixture will begin to expand, quickly pour it into the prepared pan and leave to set DO NOT MOVE for 1-2 hours.
Once the toffee has cooled and set, remove from pan and using a blunt object, shatter the toffee into bite size pieces.
Melt Chocolate in a microwave safe bowl for 75-90 Seconds - stopping to stir after every 30 seconds. Dip the toffee pieces in chocolate and place on a lined baking tray. Finish with a sprinkle of sea salt and place in the refrigerator to cool for 15 minutes. Enjoy! All Tasty music provided by Audio Network and Warner Chappell Inc. Used with permission
