How To make Cincinnati Chili
1 Quart Water
2 Medium Onions
grated fine
2 8 oz. can tomato sauce
5 Whole Allspice
1/2 Teaspoon Red pepper
1 Teaspoon Cumin seed :
ground
4 Tablespoons Chili powder
1/2 Ounce Chocolate, unsweetened -- bitter
2 Pounds Ground beef
4 Garlic cloves
2 Tablespoons Vinegar
1 Large Bay leaf, whole
5 Whole Cloves
2 Teaspoons Worcestershire sauce
1 1/2 Teaspoons Salt
1 Teaspoon Cinnamon
Add ground beef to water in 4-quart pot, stir until beef separates to a very fine texture. Boil slowly for half an hour. Add all other ingredients. Stir to blend, bringing to a boil. Reduce heat and simmer, uncovered, for about three hours. The last hour, pot may be covered after desired consistency is reached. Chili should be refrigerated overnight so that fat can be lifted from the top before reheating and serving. Serves eight. Serve "three-way", with macaroni or spaghetti and grated cheese, "four-way" as above with kidney beans, or "five-way" with beans and chopped onions. >From Cincinnati newspaper clipping;no date on clipping, I think it's perhaps10 years old or so.

Cincinnati Chili Recipe (Chili Cheese Dogs) | I Heart Recipes
Hey y’all! If you’ve never had Cincinnati Chili, you’ve got to give it a try. Here’s my recipe for authentic Cincinnati Chili.
I lived in Ohio for just a couple of months when I was 16, and that is when I fell in love with Cincinnati Chili. Everything about it is amazing. The flavors and aroma, even the texture. I had to recreate this dish and make it my own. Watch my tutorial to see how I make my version of Cincinnati Chili.
Start by browning ground beef. You can use ground turkey, but I prefer beef. Add in a good amount of chopped onions, a little water and a can of tomato sauce, and give it a stir. I use a homemade Cincinnati Chili spice mixture as my local grocer doesn’t carry it prepackaged. My spice mixture is super simple and so good. Add this to the meat along with minced garlic and vinegar. Next add in unsweetened chocolate. You read that right, y’all! Unsweetened chocolate is a key ingredient to authentic Cincinnati chili. It gives it a rich flavor and a nice dark color. Stir until the chocolate is melted. Simmer for 2-½ hours, making sure to stir periodically so the bottom doesn’t burn. There are two popular ways to serve this chili. One way is to serve over a bed of spaghetti and the other is to spoon it over a hot dog. Whichever way you decide, top with shredded cheese and onions, and you’re good to go!

2:05 - Let simmer for 2-½ hours.
2:25 - Skim off excess fat.
2:45 - Serve the chili over spaghetti.
2:54 - Top with shredded cheddar cheese.
3:03 - Serve on top of a hot dog.
3:10 - Top with shredded cheddar cheese.
