how to bake our top secret coffee cake

Equipment needed:
Stand or hand mixer
Bundt pan
For the cake:
2 sticks of butter (1 cup)
2 cups of sugar
2 large eggs (beaten)
2 cups of flour (scoop and level!)
1 teaspoon baking soda
1 tablespoon baking powder
1/4 teaspoon salt (the recipe uses table salt, but I’m sure kosher is fine)
2 cups of sour cream
1 tablespoon of vanilla extract
For the cinnamon streusel:
3/4 cup of sugar
1 tablespoon cinnamon
3 cups chopped pecans (or however many you prefer- or none at all if you have a nut allergy)
Steps:
Cream the butter
Add sugar and cream with butter until smooth
Add beaten eggs to the mixture- mix on low to combine
Pulse in flour until just combined
Add in baking soda, baking powder, and salt
Add sour cream and mix until well combined, scrape down the bowl to ensure there are no lumps
Add vanilla extract
Bake at 350 F for 1 hour
Preparing the pan:
first layer- cinnamon sugar mixture. put a generous dusting in the bottom of the pan.
next- fill bundt pan to the halfway point with batter.
another layer of cinnamon sugar
last layer of batter (should use up remaining batter)

Easy Recipe | Cream Cheese Coffee Cake
Cream Cheese Coffee Cake
13 x 9 Pan -greased 350° 40-45 minutes
Filling
2 - 8oz Cream Cheese - softened 1/2 C Sugar 1 Egg 1/2 tsp Vanilla Mix all ingredients until well blended. Set aside.
Cake
3 C Flour
1 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 C Butter
1 C Sugar
4 Eggs
1 tsp Vanilla
1 C Sour Cream
Mix flour, baking soda, baking powder & salt in small bowl.
Cream butter & sugar together in large bowl until light & fluffy. Add vanilla and eggs one at a time, add vanilla & mix well.
Slowly add flour and sour cream, alternating until well mixed.
Grease 13 x 9 baking pan. Add 1/2 cake batter to pan, spread cream cheese filling and add remaining batter. Topping (you can double these amounts, you never have enough crumb topping) 1/4 C Sugar 1/4 C Flour 3 Tbsp Butter Sprinkle of Cinnamon Mix all together in a small bowl cutting with a fork until crumbs appear. Sprinkle over top of cake. Bake 40-45 minutes- Cool on rack.

While it might look like your run-of-the-mill coffee cake at first, let us tell you, this cinnamon flop cake is so much better! If you haven’t heard of a flop cake before, it’s a spinoff of Swedish flop cake (a cream-filled, powdered sugar-topped cake) that skips the cream filling and focuses mainly on the buttery brown sugar topping. The topping is just three ingredients, brown sugar, cinnamon and butter, and you mix the brown sugar and cinnamon together, then cut in the butter to make a crumbly topping that you sprinkle over your homemade cake.

PA DUTCH CINNAMON FLOP--- CAST IRON WEDNESDAY
This PA Dutch butter cake/coffee is as delicious as it is easy!
CINNAMON FLOP
Ingredients
½ cup brown sugar
1.5 tsp. cinnamon
2 cups flour
1 and ¼ cup sugar
1 cup milk
¼ cup half and half (hack--- 4 tsp melted butter in a 1 C measure, fill rest of way with milk, mix. Use amount needed for recipe.)
2 Tbsp. unsalted butter, melted
2 tsp. vanilla
3 tsp. baking powder
¼ tsp. salt
6 Tbsp. unsalted butter, cold and diced (once diced, keep in fridge until ready to use)
Instructions
Preheat oven to 350°.
Spray two 8 or 9-inch round cake pans or 2 8 inch cast iron skillets with cooking spray.
Set aside.
In a small bowl, mix together brown sugar and cinnamon.
Set aside.
In a large bowl mix flour, sugar, milk, half and half, melted butter, vanilla, baking powder, and salt.
Pour into prepared pans.
Sprinkle brown sugar mixture evenly over batter.
Then slightly press pieces of cold butter into batter (see photo above).
Bake about 20 minutes or until a toothpick inserted in center comes out clean, taking care not to over-bake and dry out the cake.
