How To make Cinnamon Mini Muffins
1 1/2 c Flour
1/2 c Sugar
2 ts Baking powder
1/2 ts Salt
1/2 ts Ground nutmeg
1/2 ts Ground allspice
1 Egg; lightly beaten
1/2 c Skim milk
1/3 c Butter; melted
-TOPPING: 2 tb Sugar
1/2 ts Ground cinnamon
1/4 c Butter; melted
In a large bowl, combine flour, sugar, baking powder, salt, nutmeg and allspice. Combine the egg, milk, and butter; mix well. Stir into dry ingredients just until moistened. Spoon into greased or paper-lined mini muffin cups. Bake at 400 degrees for 12-14 minutes or until muffins test done. For topping, combine sugar and cinnamon. Brush the tops of warm muffins with butter; sprinkle with cinnamon-sugar. Nutritional Information: 96 calories, 128 mg. sodium, 9 mg. cholesterol, 12 gm. carbohydrates, 1 gm.

SMALL BATCH CINNAMON ROLL MUFFINS - Makes 4 MUFFINS and no yeast required.

Small Batch Cinnamon Roll Muffins:
INGREDIENTS
2 Tbsp butter melted and cooled
1 Tbsp egg beaten
1/3 cup milk
2/3 cup all purpose flour
2 Tbsp sugar
3/4 tsp baking powder
pinch of salt
Cinnamon Filling
1/3 cup brown sugar packed
1 tsp cinnamon
1 Tbsp butter melted and cooled
Glaze
1/3 cup powdered sugar
1/3 Tbsp milk
Directions:
Mix together melted butter, beaten egg and milk.
Add in flour, sugar, baking powder and salt. Stir until flour is incorporated.
Cinnamon Filling
Mix together brown sugar, cinnamon and melted butter.
Fold half of cinnamon mixture into batter. Don't over stir, you want streaks of cinnamon.
Fill each lined or greased muffin tin with 1/4 of the batter.
Sprinkle the top with remaining cinnamon filling.
Bake at 375 degrees F. for 12-15 minutes.
Cool in pan for a few minutes and then remove to a cooling rack.
Mix together glaze to a nice drizzling consistency.
Drizzle cooled muffins.

Cinnamon Pancake Mini Muffins Recipe | The Sweetest Journey
Learn how to make this fun breakfast addition by turning pancakes into mini muffins! ????
Ingredients:
3/4 Cup All Purpose Flour (105g)
1 Teaspoon Baking Powder (5g)
1/4 Teaspoon Baking Soda (1.25g)
1 Teaspoon Cinnamon Powder (2.6g)
1 Egg
1/2 Cup Buttermilk (120ml)
1 Tablespoon Butter, melted (12.5g)
1/2 Teaspoon Vanilla Extract (2ml)
1 Tablespoon Honey (15ml)
Directions:
1. In a bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Set aside. In another bowl, whisk the egg. Add the buttermilk, melted butter, vanilla, and honey. Beat until well combined. Add the dry ingredients to the mixture, mixing just until combined.
2. Grease a mini muffin tin with cooking spray or butter. Spoon the batter into the tin. Bake in a preheated oven at 350°F for 10 minutes. Serve warm.
Optional: Spread butter over tops of muffins while still warm.

This Cinnamon Doughnut Muffin #BlendJet Recipe is the perfect homemade pastry! Pair with some hot tea or milk, enjoy the sweet blend of cinnamon and sugar from the comfort of your own kitchen!
Total Time: Less than 5 minutes
Servings: 1
INGREDIENTS
1 cup all-purpose flour
1/4 cup coconut sugar
2 tsp baking powder
1 tsp salt
1/4 cup milk of choice
1/2 cup applesauce
1/4 cup coconut oil
1 Tbsp maple syrup
For muffin topping:
1 Tbsp coconut sugar
1 tsp cinnamon
DIRECTIONS
1. Add dry ingredients into mixing bowl and whisk until combined
2. Pour liquid ingredients into BlendJet and blend for 1 cycle
3. Pour blended liquid into the mixing bowl and whisk together dry and wet ingredients together
4. Fill muffin liners with batter and bake for 15-20 minutes on 400F
5. While muffins are baking, make a coconut sugar and cinnamon mixture
6. Dip muffin tops into melted butter of choice and roll muffins in cinnamon sugar
7. Serve and enjoy!
