4 Eggs; beaten
1 1/2 c Sugar
1/2 c Butter; melted
1 tb Vinegar
1 ts Vanilla
1/2 ts Salt
1 c Coconut; flaked
1 Pie shell, 9", partially
-baked Toasted flaked coconut (OPT) Combine first 6 ingredients. Beat well. Stir in 1 cup coconut; pour into partially baked pie shell. Bake at 325~ for 45 to 50 minutes or until set. Cool on wire rack. Garnish with toasted coconut. From Southern Living, Sept. 1986. -----

Pie filling:
1/2 cup melted butter, cooled
2 cups sugar
4 large eggs
2 tablespoons all-purpose flour
1/3 cup evaporated milk
1 teaspoon vanilla extract
1/4 teaspoon coconut flavoring
1/4 teaspoon salt
1 3/4 cups Angel Flake Coconut
Bake in preheated oven at 400 degrees for 15 minutes
Turn oven down to 350 degrees and bake for
additional 30 minutes.

1 CHILLED 9 UNBAKED PIE CRUST EITHER YOUR OWN FAVORITE OR MINE FROM MY FIRST VIDEO
4 EGGS
1/2 CUP SUGAR
1/4 TSP.SALT
1 TSP VANILLA
2 1/2 CUPS MILK,SCALDED
3 1/2 OZ. COCONUT
1/4 CUP BROWN SUGAR
2 TBSPS.SOFT BUTTER
BEAT EGGS SLIGHTLY.
STIR IN SALT,SUGAR AND VANILLA
GRADUALLY STIR IN MILK
RESERVE 1/2 CUP OF COCONUT AND STIR THE REST INTO THE MILK MIXTURE
POUR CAREFULLY INTO THE CHILLED PIE CRUST AND BAKE AT 400 DEG. FOR 25-30 MINUTES TIL KNIFE HALFWAY BETWEEN EDGE AND CENTER TESTS CLEAN.
LET COOL
BEFORE SERVING,BLEND BROWN SUGAR,BUTTER AND COCONUT
TOGETHER AND SCATTER ON THE PIE
BROIL 3-4 INCHES FROM HEAT FOR 2-3 MINUTES UNTIL LIGHTLY BROWNED.

Deep dish pie shell

Here is a pie recipe that has become a favorite at family gatherings. This recipe is called the Coconut Pineapple Chess Pie. It is super easy to put together and will be a delight for those pineapple and coconut lovers! I hope that you will try it and enjoy!
Here is the recipe:
1 1/2 cup sugar
1 tablespoon all purpose flour
3 tablespoons corn meal
1/4 teaspoon salt
1/2 stick (1/4 cup) of butter or margarine
4 large eggs
1 teaspoon vanilla extract
1 (15 oz.) can crushed pineapple, drained very well
1 cup flaked coconut
Directions:
- HEAT oven to 350°F.
- COMBINE sugar, flour, corn meal and salt in bowl of electric mixer; mix until combined. Lightly beat eggs and then add them to sugar mixture in bowl, along with the vanilla. Beat at medium speed, until well combined. Next. add melted butter or margarine, pineapple and coconut flakes. Mix well. Pour into unbaked pie crust.
- BAKE One hour or until lightly browned and knife inserted in center comes out clean. Cool to room temperature before serving. - Refrigerate leftover pie.

Easy Chess Pie
Easy recipe for Chess Pie. So delicious! This is a standard Southern favorite. My mom passed away recently, and she loved this pie recipe so much. I feel closer to her somehow when I make it. It is so delicious that I wanted to share it with you. Don't forget to download your free recipe card so you can have this in your recipe box without having to write it down. Easy Chess Pie
1 pie shell
1 stick butter, melted
1 1/2 cups sugar
3 well beaten eggs
1 tablespoon corn meal
1 tablespoon vinegar
1 tablespoon vanilla
Preheat oven to 300 degrees F. Place pie shell into pie dish and set aside. Mix all other ingredients in a medium size mixing bowl. No need to use electric mixer. Just mix by hand. Pour into unbaked pie shell. Bake in 300 degree F oven for 45-50 minutes or until set in the center. Cool. Slice into 8 equal pieces. Delicious served with a dollop of whipped cream or a sprinkle of confectioner's sugar.
OPTIONAL:
Chocolate Chess Pie: Add in 3 Tablespoons cocoa
Coconut Chess Pie: Add in 3/4 to 1 cup shredded coconut
Lemon Chess Pie: Add in the juice of 2 large lemons
