My lemon chess pie recipe is easy and delicious. Best described as lemon bars with a bit of texture, this pie is full of citrus flavor because of all the freshly grated lemon zest and freshly squeezed lemon juice. It only has a few ingredients, so it is really simple to make. Although the cornmeal may seem a bit out of place on the ingredients list, it actually works well in the recipe. Lemon chess pie is a somewhat forgotten old fashioned southern dessert, so I hope that my recipe helps to bring it back just in time for Thanksgiving and Christmas.
This recipe is a lemon version of chess pie, a type of southern pie that is basically a sugar pie. The main ingredients are sugar, butter, and eggs, along with a small amount of either cornmeal or flour in the filling. Basically, think of a pecan pie, but without the pecans. Although this pie sounds like it might not have much flavor, it is actually very flavorful. This lemon chess pie recipe includes both lemon zest and lemon juice, so there is no lack of flavor. In fact, it had a lot more lemon flavor than I thought it would. A good way to describe it would be a lemon bar with a bit more texture.
The cornmeal is a traditional ingredient in many southern chess pie recipes. However, if you want to make this lemon chess pie without cornmeal, simple replace it with an equal amount of all-purpose flour.
Also, even though I said I was using cornmeal in the video, I actually used polenta because it was what I had on hand. The polenta worked really well, and I think it was a bit less gritty than using cornmeal. So, if you want to make this lemon chess pie without cornmeal, substituting polenta is another option.

Lemon Chess Pie Recipe:
6 tablespoons butter
1 tablespoon lemon zest
*Or, 1 teaspoon of lemon zest and 1 teaspoon of lemon extract
1 tablespoon lemon juice
1.5 cups white sugar (215 grams)
3 large eggs
2 tablespoon cornmeal
*Or, an equal amount of all-purpose flour or polenta
1/8 teaspoon salt
1 9-inch pie crust, unbaked
1. Melt butter, then mix in sugar and all other ingredients for the filling, except for the eggs.
*This is to bring down the temperature of the melted butter so that you do not accidentally cook the eggs.
2. Mix in eggs
3. Once filling is fully mixed, pour into an unbaked 9-inch pie crust
4. Bake uncovered at 350 F for 45 minutes

Southern Classic Chess Pie
Ingredients:
1 Deep Dish Pie Crust
1 Stick of unsalted Butter (room temperture)
4 Eggs
1 1/2 Cups of Sugar
2 Tablespoons All Purpose Flour
1 Tablespoon of Yellow Cornmeal
1/4 Teaspoon Salt
1 Tablespoon of White Vinegar or Lemon Juice
1 Teaspoon of Vanilla Extract
1/4 Cup of Whole or Evaporated Milk
Bake @350 for 55 minutes. Cool Completely before serving or placing in a refrigerator.

PIE FILLING INGREDIENTS
1 2/3 Cups Granulated Sugar
1/2 Tsp Salt
1 TBSP Yellow Cornmeal
1 1/2 TBSP Corn Starch (or 3 TBSP Flour)
6 TBSP Melted Butter
3/4 Cup Lemon Juice (juice of about 3 Large Lemons)
5 Large Eggs
Pinch of Lemon Zest, optional

Ingredients:
1 9-inch pie shell, at room temp
1 tbsp cornmeal
1 ½ tbsp cornstarch
1 2/3 cups sugar 330 g
½ tsp salt optional
6 tbsp unsalted butter melted
¾ cups lemon juice freshly squeezed (you’ll need about 3 lemons). If you prefer yours less tangy, use ½ cup lemon juice and ¼ cup water.
5 large eggs at room temperature
Instructions:
1.Heat the oven to 400° F (205° C).
2.Using a fork, prick the bottom and sides of the pie crust. Bake for about 10-11 minutes or until slightly golden brown. Let it cool before adding the filling.
3.Meanwhile, prepare the filling. Whisk together cornmeal, cornstarch, sugar, and salt until you see no more lumps. Then whisk in the melted butter, lemon juice, and eggs for about 2 minutes or until homogeneous and bubbly.
4.Make sure to whisk the eggs well because you don’t want to taste the eggs in the baked pie.
5.Pour the filling into the cool pie crust and decrease the oven temperature to 375° F (190° C).
6.Place the pie onto a large baking sheet and bake in the middle rack of the oven for 45-50 minutes, or until the filling is set and golden brown.
7.If the pie crust appears to be browning too much, place a foil ring around the edge of the pie crust.
8.Let the pie cool completely on a rack. Chill in the fridge for a few hours before slicing. This will allow the filling to set well.
