1 lb Salt cod fish
6 Potatoes
1 Onion chopped
1 Egg
1/2 ts Pepper
Soak codfish over night. In morning pour off water and add fresh, put on heat and bring to boil, pour off water and put fresh on if need be, (test fish for saltness). If o.k. mix with the boiled mashed potatoes and egg. and onion. Make into cakes and fry in oil and margarine.

HOW TO MAKE CARIBBEAN SALTFISH FRITTERS | CARIBBEAN STYLE FISH CAKES | CODFISH CAKES
Hi guys, on today's video we are making some Caribbean saltfish fritters. I personally love my fritters with lots of saltfish, so I used more in this recipe. Below you will find the ingredients used for this recipe
12oz or 340g cooked saltfish (skin and bones removed). You can also use 1 pack boneless saltfish (250g) or 1 1/2 pack if more preferred
2 tsp baking powder
1 cup water
1 1/2 cup flour
4 garlic cloves
1/2 red sweet pepper
1/2 yellow sweet pepper
1/2 green sweet pepper
1/2 hot pepper or scotch bonnet pepper (according to your preference) rib and seed removed
3 scallions or green onions
1 small onion (or half medium)
1 tsp fresh thyme or 1/4 tsp dried thyme
1/2 tsp black pepper
Season to taste (optional)
Oil for frying (I used sunflower oil)
Roughly chop all fresh ingredients or chop in a food processor. Chopping veggies in food process will create extra moisture. If you chop your veggies chunky, add a bit more water to thin the batter.

Here is this weeks fish of the week:
OLD SCHOOL FRIED FISH CAKES:
RECIPE:
1# tilapia(COOKED)(any white fish will do as well)
1/2 cup mayo(I use dukes)
1 tablespoon Dijon mustard
1/2 green onions(sliced)
1/2 cup yellow onions(chopped finely)
2 whole eggs
1 tsp fresh lemon juice
2 cups bread crumbs
salt and pepper to taste
1 tsp Cavender's Greek seasoning
2 tsp sweet r spicy r shake
BREADING/COATING INGREDIENTS:
2 Cups all purpose flour
2 Cups panko bread crumbs
3 eggs beaten
DIRECTIONS:
place fish in large mixing bowl
flake the fish in large pieces(don't flake too small)
add other ingredients and mix together gently(you don't want to mush up the fish too much)
Scoop fish cake mix into large circles
bread(coat) fish cakes with :
flour, egg and Japanese(panko) bread crumbs
fry in vegetable oil (medium heat) until golden brown on each side(usually takes 3-5 minutes each side)
Enjoy with tartar sauce or cocktail sauce
