Assalamualaikum Warahmatullahi Wabarakaatuh Nama saya Qorina Nadiva dari S1 Pendidikan Tata Boga Universitas Negeri Malang (UM) Kali ini saya akan membuat Seafood Pizza Saus Padang. Cumi dan udang merupakan jenis seafood yang banyak dikonsumsi karena rasanya yang lezat dan kenyal. Mengolahnya dengan saus padang yang memiliki cita rasa seimbang antara sedikit asam, manis, dan pedas sangat tepat untuk dipadukan dengan pizza.
Berikut adalah resep dari Seafood Pizza Saus Padang:
????Pizza Dough:
250 gr Tepung Terigu Pro Tinggi
65 gr Air dingin
4 gr Ragi Instan
4 gr Garam
10 gr Susu Bubuk
50 gr Telur
38 gr Minyak
2,5 gr Bread Improver
????????????Seafood Saus Padang:
200 gr Cumi
100 gr Udang
3 lembar Daun jeruk
½ Bawang bombay
3 sdm Saus tiram
4 sdm Saus tomat
3 sdm Saus sambal
1 sdm Maizena
100 ml Air
2 batang Daun bawang
Bumbu halus:
2 cm Jahe
10 buah Cabe keriting
4 siung Bawang putih
6 siung Bawang merah
30 ml Minyak
Lain-lain:
Oregano
Paprika
Mozarella
Red cheddar
Cara Membuat:
????Pizza Dough:
•Campur semua bahan kering kecuali garam.
•Masukkan telur, aduk rata.
•Tambahkan air secara bertahap. •Masukkan garam dan minyak. •Uleni semua bahan sampai kalis.
•Biarkan adonan difermentasikan selama 45-60 menit (hingga mengembang 2x lipat).
????????????Seafood Saus Padang:
•Cuci bersih cumi dan udang. Potong cumi dengan ketebalan minimal 1 cm, belah memanjang punggung udang, buang kotorannya.
•Potong wedges bombay, potong daun bawang, buang bagian tangkai daun jeruk.
•Potong bahan bumbu halus dengan ukuran lebih kecil kemudian blender bumbu halus.
•Tumis bumbu halus dengan daun jeruk dan bombay hingga wangi.
•Masukkan cumi, kemudian setelah beberapa saat tambahkan udang. Aduk merata.
•Tuangkan saus tiram, saus cabe, dan saus tomat. Aduk, kemudian tambahkan maizena yang dilarutkan dengan 100 ml air.
•Setelah mengental, matikan api, masukkan daun bawang. Aduk merata dan sisihkan
Penyelesaian:
•Gilas adonan (untuk membuang gasnya) dengan bentuk bundar.
•Isi bagian pinggiran dengan keju, berikan topping oregano, seafood saus padang, mozarella, red cheddar, dan paprika. Kemudian fermentasikan kembali dalam suhu ruang selama 30 menit atau hingga double size.
•Panggang di oven yang sudah dipanaskan di suhu 180℃ selama 20 menit. (Sesuaikan dengan oven masing-masing)

Here is a recipe from Seafood Pizza Saus Padang:
????Pizza Dough:
250 gr High Protein Flour / Bread flour
65 g Cold water
4 g Instant Yeast
4 g Salt
10 g Milk Powder
50 g Egg
38 g Oil
2.5 g Bread Improver
????????????Seafood Saus Padang:
200 g Squid
100 g Shrimp
3 slices Lime leaves
½ Onion
3 tablespoons Oyster sauce
4 tablespoons Tomato sauce
3 tablespoons Chili sauce
1 tablespoon Cornstarch
100 ml Water
2 stalks Leeks
Ground spices:
2 cm Ginger
10 pieces of curly chilies
4 cloves Garlic
6 cloves shallots
30 ml Oil
Others:
Oregano
Paprika
Mozarella
Red cheddar
How to Make:
????Pizza Dough:
•Mix all dry ingredients (yeast, milk powder, bread improver, bread flour) except salt.
•Enter the eggs, mix well.
•Add water gradually. Add salt and oil. Knead all ingredients until smooth.
•Let the dough ferment for 45-60 minutes (until it expands into double size).
????????????Seafood Saus Padang:
•Wash the squid and shrimp. Cut the squid with a thickness of at least 1 cm, for shrimp; split lengthwise from the back of the shrimp, remove the dirt.
•Cut wedges the onion, chop the leeks, remove the lime stalks.
•Cut the ground spices into smaller sizes then blend the ground spices.
•Saute ground spices with lime leaves and onions until fragrant.
•Add the squid, then after a while add the shrimp. Stir well.
•Pour the oyster sauce, chili sauce, and tomato sauce. Stir, then add the cornstarch diluted with 100 ml of water.
•After thickening, turn off the heat, add the leeks. Stir well and set aside.
Completion:
•Roll out the dough (to get rid of the gas) in a round shape.
•Fill the edges with cheese, top with oregano, seafood sauce Padang, mozzarella, red cheddar, and paprika. Then ferment it again at room temperature for 30 minutes or until it is double size.
•Bake in preheated oven at 180℃ for 20 minutes. (Adjust to each oven)
• Serve.

Super easy Seafood Pancake / Pizza Recipe
Main Ingredients
1. 3/4 cup Frying Mix or Tempura Power
2. 3/4 cup of cold water
3. 1 egg
4. 5 green onions
5. 1/2 LB seafood blend (shrimp, scallop, and calamari)
6. 1/4 medium size onion
7. 1 red and 1 green pepper
8. 1/2 cup cooking oil
Dipping Sauce Ingredients
1. 1 Tbsp. soy sauce
2. 1 Tbsp. vinegar
3. sesame seeds
Direction
1. For the batter add 3/4 cup of cold water to 3/4 cup of frying mix, and whisk until well incorporated.
2. Cut green onions into length of pan, and divide them as needed.
3. Cut 1 red and 1 green pepper, and remove seeds.
4. Slice 1/4 of medium size onion.
5. Break 1 egg and mix it slightly
6. Heat the pan with medium high, and add enough cooking oil.
7. Reduce heat to medium, and place 1/3 of batter on the pan.
8. Put green onions on the batter.
9. Add some batter on the green onions, and put onion slices on it.
10. Spread out seafood on green onions and onions.
11. Add more cooking oil around the pancake, and shake the pan as needed.
12. Put the rest of batter on seafood spread and around the pancake with circular motion.
13. Place red and green pepper slices, and add more cooking oil.
14. Pour out egg mixed on the very top of pancake.
15. Spread out all ingredient with ladle on the pan, and shake the pan as needed.
16. Keep medium heat until like 5 more minutes for golden brown color on the bottom of pancake.
17. Flip the pancake and add more cooking oil.
18. Stay in medium heat for another 5 minutes and decrease heat to medium low until bottom part changes to light brown. Shake the pan as needed.
19. Turn off the heat and transfer the pancake to cutting board to cut it into bite size.
20. All ready to serve. Let’s eat!

Grilled Seafood Pizza
Last we were in the Bahamas for the Best Steak Contest in the world thanks to Grill Grates -
One of the events was a pizza party on the beach. Chef Michael and crew were making fresh, hot pizzas right there in the sand and my fave the local lobster and shrimp pizza with a white sauce.
For this recipe I picked up several lobster tails and a pound of raw gulf shrimp from my local grocery. I opted for a simple pizza dough recipe but a store bought dough would work in a pinch.
The next step was the “white sauce”; it’s my take on an easy Alfredo sauce which is butter, flour, heavy cream, and parmesan.
The dough and the sauce can be made ahead of time. For the seafood fire up a grill (I used my Big Green Egg) and bring it up to 450-500 degrees.
Split the tops of the lobster and loosen the meat with your fingers. Skewer the shrimp and drizzle the lobster and shrimp skewers with olive oil. Season everything with a blend of Garlic Salt, Parsley, and Crushed Red Pepper and grill until the shrimp and lobster are no longer translucent. It only takes 4-5 minutes for the shrimp and 8-10 for the lobster.
Remove the shrimp from the skewers and the lobster tails from the shells and course chop everything. Toss together and reserve until building the pizzas.
Place a ceramic pizza stone on the hot grill and allow it to come up to temperature. Form the dough balls into a pizza shape on a floured surface and ladle on the white sauce. Spread shredded mozzarella over the pizza and top with the lobster and shrimp. Season with another good pinch of the Garlic Salt mixture and drizzle with a little olive oil.
Place the pizza on a the stone and cook until the top is bubbly and the crust is golden brown.
Grilled Seafood Pizza Ingredients:
- 1lb Gulf Shrimp Raw (peeled and deveined)
- 4 Lobster Tails
- 2 Tablespoons Olive Oil divided
- 2 Tablespoons Garlic Salt
- 1 teaspoon Dried Parsley
- 1 teaspoon Crushed Red Pepper
- 2 cups White Pizza Sauce* (recipe to follow)
- 2 10” Pizza Dough Balls* or prepared crusts from store (recipe to follow)
- 12oz Shredded Mozzarella Cheese
Directions:
1. Prepare Big Green Egg or other bbq grill for indirect cooking at 450-500 degrees.
2. Place shrimp on wooden skewers (soak skewers in water to prevent burning). Use kitchen shears to split lobster tails down the top. Gently work the meat away from the shell using your fingers
3. Drizzle the shrimp and lobster with olive oil. Combine the garlic salt, parsley, and red pepper in a small bowl and season the shrimp/lobster with several pinches of the seasoning blend.
4. Cook the shrimp and lobster on the grill until no longer translucent. Shrimp about 4-5 minutes, lobster about 8 minutes.
5. Remove the shrimp from the skewers and the lobster tails from the shell. Chop into bite size pieces and toss together. Place meat in a small bowl.
6. Place dough (*recipe below) on a lightly floured surface and form into a thin pizza crust. Use your hands or a roller and if the dough tears pinch it back together. You can also substitute a store bought pizza crust if you prefer.
7. Carefully transfer the pizza dough onto a sheet of butcher paper. Ladle white sauce (*recipe below) onto the crust and top with shredded mozzarella cheese. Add the shrimp and lobster meat and season with a pinch of garlic salt seasoning blend and a drizzle of olive oil.
8. Place the pizza on a ceramic cooking stone and cook until the crust is brown and the cheese is hot and bubbly.
*White Sauce:
- 1/2 stick Butter
- 1/4 cup All Purpose Flour
- 2 cups Heavy Cream
- 1 cup Parmesan Cheese grated
- 1 teaspoon Salt
- 1/2 teaspoon Ground White Pepper
- 1/2 teaspoon Granulated Garlic
Melt butter over medium heat. Add flour and whisk for 2-3 minutes. Slowly whisk in heated heavy cream and bring to simmer. Add parmesan cheese and seasoning.
*Pizza Dough
- 3/4 cup warm water (100-110 degrees)
- 1 teaspoon Active Dry Yeast1 teaspoon Sugar
- 2 cups All Purpose Flour1 teaspoon Salt
- 1 Tablespoon Olive Oil
Add water, yeast, and sugar and allow to dissolve for 5 minutes until bubbles form. Add 1/2 flour and mix on low 2 min. Scrape sides, add remaining flour and mix for 3 min. Scrape sides, increase speed and mix 3 min. Place dough on a floured surface, knead dough gently and form a ball. Grease bowl with olive oil and gently move the dough in the bowl to oil the outside. Cover with towel and place in a warm place to rise for 1 hour.

Savory Cheesy Seafood Pizza [9 minutes]
This is an extremely crusty, cheesy, fast, and delicious Seafood Pizza recipe!
Ingredients:
1. Pizza dough (this recipe is for 2 pizza crusts 24cm)
250gr (2 cups) bread flour (protein ≥13%)
170gr cold water (almost 1 cup)
3gr instant yeast (0.5 tbsp)
3gr salt (1tsp)
7gr honey (1tbsp)
*Depending on the type of bread flour that we can adjust the water more or less
2. Toppings for 2 pizza crusts 24cm:
100gr fresh shrimps
100gr fresh squids
100gr clam meat
20gr bell peppers (any color, more or less)
40gr onion
200gr shredded mozzarella cheese
You can add more fresh mozzarella cheese as you like (optional)

Baking: preheat the oven with the baking tray at 240°C for 15 minutes, then bake the pizza at 240°C for 8 minutes

How to make the world's best special Australian Pizza / Cyclone seafood pizza recipe
Ingredients
5 cups all purpose or 00 flour + some for dusting
1 1/2 tsp active dry yeast
1 1/2 tsp sea salt
2 1/4 cups COLD water
1 extra virgin olive oil
Instructions
Preheat your oven as high as it will go for at least 45 minutes to one hour.
2In the bowl of your kitchen aid and using the paddle attachment mix the flour, sea salt and active dry yeast on low speed until all is incorporated then add the COLD water.
Switch to the dough hook and mix together on low speed for 8 to 10 minutes. The dough should be smooth and sticky but should not stick to the sides of the bowl, only a little to the bottom.
If the dough sticks to the sides sprinkle in a little more flour, if it is too dry then add a bit more water
After the 8 minutes have passed remove the dough from the kitchen aid and cut it into 6 pieces and form them into rounds. Place them on a lightly oiled cookie sheet and drizzle with 1 of extra virgin olive oil. Cover with plastic wrap and allow to sit at room temperature and rise for 2 hours in a draft free area. I prefer the oven
Sprinkle the counter with a little bit of flour, take one piece of dough and press down on it with your fingers until you have 1/2 thick circle or oval. Using your fists and knuckles start stretching the dough until 10 in diameter making sure not to tear it this should be easy since it is a small pie.
