Conch Chowder *

:
1/4 lb salt pork
2 med onions chopped
4 cloves garlic :
crushed
1 lg green pepper -- chopped
1 1-pound can tomatoes
1 6-oz. can tomato paste
2 qt hot water
1 tsp poultry seasoning
8 lg conchs
1 tbsp vinegar
salt and pepper to taste 1 tbsp oregano
4 bay leaves
2 tbsp favorite barbecue sauce
9 med potatoes :
peeled and sliced
Dice the salt pork and fry in a large pot. Add the onions, garlic and green pepper. Cook until tender but not browned. Add the tomatoes, tomato paste, hot water and poultry seasoning. Cook over low heat while preparing conch. Pound the conchs with a small mallet to break up the tough tissue. Chop coarsely and add to the chowder. Bring to a boil. Add the vinegar, salt and pepper, oregano, bay leaves and the barbecue sauce. Bring to a boil again, cover, turn heat to low and simmer 2 hours. Add potatoes and simmer until potatoes are tender, about 20 minutes. Makes 8 generous servings.

2 cups self-rising flour
1 1/2 c of whole milk
Juice of 1 lemon
Seasonings
Fish Seasoning (Found at the Caribbean Food Market) or season to your choice
Garlic Salt
Onion Powder
3-4 dashes of hot sauce (or red pepper for spice)
Vegetable oil for Frying

Curried Conch with Dumplings (simmered in coconut milk) | Lambie/Sea Conchs
Learn how to make this delicious Curried Conch (konks) with Dumplings simmered in coconut milk. One bite, and you'll be transported to Store Bay, Tobago.
INGREDIENTS:
1 ½ - 2 lbs of cleaned conchs or lambie, washed with flour and cut into small chunks
Salt + black pepper (your preference)
½ cup of green seasoning
1 tbsp oil
1 medium onion, diced
10-12 cloves of garlic, minced
3-5 curry leaves
3-5 sprigs of thyme
Hot pepper (s)
1 ½ tbsp. curry + 1 tsp turmeric + 1 tsp roasted ground geera + 1 tsp black amchar masala
1 can (1 ½ cups) of coconut milk
Fresh herbs – chive/scallion + bandhania/culantro
Coconut Dumplings:
3 cups of flour
2 tsps salt
1 tbsp sugar
½ cup coconut milk powder
1 ¼ – 1 ½ cups of lukewarm water

Conch in Butter Sauce, Virgin Islands ???????? ????????
Today we are making one of my favorite dishes from the island of st Thomas ???????? ???????? where I was born. Conch in butter sauce. NOTE: I cleaned and pressure cooked my conch for 1 hour 50 minutes the night before to make it easy to just make sauce and add conch the next day.
