Conch Chowder *

Preparation Method :
:
1/4 lb salt pork
2 med onions chopped
4 cloves garlic :
crushed
1 lg green pepper -- chopped
1 1-pound can tomatoes
1 6-oz. can tomato paste
2 qt hot water
1 tsp poultry seasoning
8 lg conchs
1 tbsp vinegar
salt and pepper to taste 1 tbsp oregano
4 bay leaves
2 tbsp favorite barbecue sauce
9 med potatoes :
peeled and sliced
Dice the salt pork and fry in a large pot. Add the onions, garlic and green pepper. Cook until tender but not browned. Add the tomatoes, tomato paste, hot water and poultry seasoning. Cook over low heat while preparing conch. Pound the conchs with a small mallet to break up the tough tissue. Chop coarsely and add to the chowder. Bring to a boil. Add the vinegar, salt and pepper, oregano, bay leaves and the barbecue sauce. Bring to a boil again, cover, turn heat to low and simmer 2 hours. Add potatoes and simmer until potatoes are tender, about 20 minutes. Makes 8 generous servings.

Ingredients
6 Conchs (tenderized)
2 ps. Oil
1 cup Flour
1 med. Onion
1/2 med. Bell Pepper
1 Celery Stalk
1 tbsp. Thyme
1/2 Lime
Carrots (cut up)
Potatoes (Cut up)
1 tbsp. tomato Paste
Garlic Salt (to taste)
1 tbsp. Garlic Powder (or 1 garlic clove)
1 tbsp. Mrs. Dash
1/2 tsp. Red Pepper Flakes
1 tbsp. Ginger (diced) *optional
water (3 cups depending on the size of your pot)
*Pay close attention to the flour in the pot because it burns easily. Be sure to allow the tenderized conch a minute or two to scald first in just hot water before adding to your stew.
Enjoy with home-made bread, cassava bread, potato bread or grits.

INGREDIENTS:
1 ½ - 2 lbs of cleaned conchs or lambie, washed with flour and cut into small chunks
Salt + black pepper (your preference)
½ cup of green seasoning
1 tbsp oil
1 medium onion, diced
10-12 cloves of garlic, minced
3-5 curry leaves
3-5 sprigs of thyme
Hot pepper (s)
1 ½ tbsp. curry + 1 tsp turmeric + 1 tsp roasted ground geera + 1 tsp black amchar masala
1 can (1 ½ cups) of coconut milk
Fresh herbs – chive/scallion + bandhania/culantro
Coconut Dumplings:
3 cups of flour
2 tsps salt
1 tbsp sugar
½ cup coconut milk powder
1 ¼ – 1 ½ cups of lukewarm water
