1938 Corn Flake Macaroons Recipe Welcome friends! Welcome back to Sunday Morning and the Old Cookbook Show. Today we are going to do a 1938 Depression Era recipe for Corn Flake Macaroons - or Corn Flake Meringue Cookie Recipe. Ingredients: 2 egg whites 175 mL (¾ cup) white sugar 500 mL (2cups) Corn Flakes 60 mL (¼ cup) chopped nuts Pinch of salt 5 mL (1 tsp) vanilla
Method: Preheat oven to 180ºC (350ºF). Beat the egg whites to stiff peaks. Add sugar and beat in, until smooth and glossy. Beat in vanilla. Fold in corn flakes and nuts. Drop by spoonfuls onto parchment lined baking sheet. Bake for 12-15 minutes. Allow to cool on a rack. Keep in an airtight container - thesis will lose their ‘crunch’ after a day or two.

Makes 24 cookies
Ingredients: 4 egg whites, room temperature 170 grams / 3/4 cup superfine sugar 1 teaspoon vanilla extract 130 grams / 4.5 ounces dark chocolate, roughly chopped 3 cups cornflakes
Directions: Preheat the oven to 150°C/300F and line a baking tray.
Place the egg whites in a bowl and beat while slowly adding the sugar until stiff peaks form.
Add the vanilla extract, chocolate and cornflakes and carefully fold through until well combined.
Place teaspoon amounts onto the baking tray and bake for 20 minutes or until slightly golden and crisp.
Remove and allow to cool on the baking tray for 5 minutes. Set aside to cool completely.
Serve, trying to eat only one.
