How To make Corn Pancakes(Mf)
1 cup buttermilk
plus more if needed 2 tablespoons corn oil
1/2 cup yellow cornmeal
1/2 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup minced red bell pepper
1 10 ounces pa frozen corn kernels :
thawed
2 eggs separated
1 scallion -- finely sliced
freshly ground black pepper
Blend the cup of buttermilk and corn oil together. Add the cornmeal and steep it to soften for 15 minutes while you get all the other ingredients together.
Meanwhile sift the flour with the baking powder, baking soda and 1/2 teaspoon of salt.
Combine the bell pepper, with corn kernels, egg yolks and scallion and season with freshly ground black pepper.
Right before you begin to make the pancakes, combine the buttermilk and cornmeal mixture with the bell pepper, corn and scallion mixture and stir well.
Whip the egg whites until stiff but not dry. Preheat the griddle. With a few swift strokes fold the dry ingredients into the wet ingredients (add more buttermilk if needed) and fold in the egg whites. Drop about 1/4 cup of batter onto the griddle and cook for about 2 to 3 minutes per side.
Serve with ham steaks.

Did you know that the Dutch baby pancake isn't even Dutch? That's right — it's actually American and was invented in Seattle, Washington! It is derived from the German version of pancakes, known as pfannkuchen, which are much thinner than an American-style pancake, but still thicker than a French-style crêpe. So what does the Dutch baby pancake have to do with the Dutch people or the Netherlands, you might wonder? Well, probably nothing, actually. The German word for German is Deutsch, and so it's believed that the Deutsch part was maybe misheard or got mixed up with Dutch, and so the name stuck. In any case, we're just happy someone came up with the recipe!
You'll need:
For the pancake:
- 4 eggs
- 1 pinch of salt
- 1 tsp vanilla extract
- 4½ oz flour
- 8 fl oz milk
- 2 tbsp butter
For the garnish:
- strawberry jelly
- 7 oz halved strawberries
- powdered sugar
Here's how:
1. Preheat the oven to 360°F and insert a cast-iron skillet.
2. Beat the eggs, salt, and vanilla flavoring together with a whisk. Add the flour and stir until smooth. Then gradually stir in the milk.
3. Remove the hot pan from the oven and let the butter melt in it. Swivel the pan so that the melted butter coats the entire bottom. Pour the pancake batter into the pan and place it back in the oven. Bake the pancake at 410°F for about 20 minutes, or until golden brown.
4. Remove the pancake from the oven and spread strawberry jelly over the middle of the pastry. Place fresh strawberries on top of the jelly and garnish the pancake with a dusting of powdered sugar.
If you're not a fan of strawberries, try a different jam flavor (and fruit), such as raspberry, blueberry, blackberry, apricot, peach, or even black cherry — the possibilities are endless! It's a pretty fast treat to make, so you can zip through every flavor imaginable in one tasty afternoon. As the Dutch would say, Eet Smakelijk!
