How To make Cornmeal Waffles with Chili Topping
3/4 c Whole wheat flour
1/2 c Cornmeal
1 t Salt
2 t Baking powder
1 c Lowfat soy milk
1 T Oil
CHILI TOPPING:
x Vegetable cooking spray 1 lg Onion, chopped
1 Green pepper, chopped
1 T Chili powder
2 c Cooked pinto or kidney
Beans This chili topping is also good with the Spicy Corn Pancakes. The chili topping can be made in advance and reheated once the waffles are hot. Mix flour, cornmeal, salt, and baking powder. Add soy milk and oil and stir gently until well blended. Heat waffle iron, pour in the appropriate amount of batter for your specific model, and spread to the edges of the waffle iron. Close and cook until gently browned. Serve immediately. For Chili Topping: Spray nonstick skillet with vegetable cooking spray and saute onion and pepper over medium heat for 3-4 minutes or until translucent. Add chili powder and beans and cook 5 minutes over medium heat. Pour chili topping over cornmeal waffles. Hand held chili in a corn meal waffle cone! Every bite is a party for your mouth. Recipe below

RECIPE
1 pound of ground beef
1 cup of tomato sauce
1 cup of stewed tomatoes
1 tablespoon of chili powder cumin, oregano, salt and pepper.
1 chopped hot dog.
1/2 chopped onion
1 minced clove of garlic
WAFFLE CONE
1/4 cupo of all purpose flour
1/4 cup of corn meal
1/2 cup of milk
2 tablespoons of melted butter
1 egg
1/4 cup of hot sauce
1/4 cup of chopped green onions, sour cream and shredded cheddar cheese.

Step 1
Brown the ground beef in a pot. When there is no more red in the meat, add the onions and cook until they are soft.
Step 2
Add the hot dogs and cook for a few minutes.
Step 3
Add the can of tomatoes and the seasoning. Simmer until there is no longer moisture in the pot.
WAFFLE CONES
Step 4
In a bowl, combine the flour, salt and corn meal.
Step 5
In another bowl, combine the egg, milk and hot sauce. Mix together the wet with the dry until you have a consistent batter.
Step 6
Heat the waffle maker, and fry the waffles. Using the waffle cone mould, shape the cone.
Step 7
Scoop chili into the cone. Garnish with cheese, sour cream and green onions.

Hey family!! In today's video it's a rainy fall day so it's time for Chili!! We make a copycat Wendy's Chili recipe and some cornbread waffles!

Chili Recipe:
(NOTE: This recipe will make A LOT of Chili! I only made half because I wasn't sure if we would like it. We loved it, everyone had seconds, and we STILL had leftovers. So this amount would be enough for two meals for us.)
Ingredients
4.5 pounds ground beef browned and drained
2 large yellow sweet onions, chopped
7 large green bell peppers chopped
4 celery ribs chopped
2 heaping tablespoons minced garlic
2 cans Ranch Style Beans NOT drained (15 ounce cans)
2 cans dark red kidney beans drained (15 ounce cans)
2 cans Original Rotel Diced Tomatoes and Green Chili 10 ounce cans
2 cans stewed tomatoes 15 ounce cans
4 cans plain tomato sauce 15 ounce cans
2 packages McCormick Mild Chili Seasoning 1.25 ounce packages
Instructions:
For Slow Cooker:
Combine all ingredients in slow cooker. Cover and cook on high 4-6 hours. I did have to add 1 cup of water when it was done.
For Stove Top:
Combine all ingredients in a large stock pot.
Simmer for at least three hours.

Cheddar Habanero Cornbread Waffles (enough for 4-6 servings)
• 1 ¾ cups Self-Rising Cornmeal Mix
• ½ cup Creamed Corn
• 1 cup Whole Milk
• 1 egg (beaten)
• 1 ¾ cups Sharp Cheddar (shredded)
• 3 tablespoons Butter (melted)
• 1 tablespoon El Yucateco Caribbean Habanero Hot Sauce
• ¼ cup Chili Peppers (roasted and diced)
The Recipe
1. Stir the El Yucateco Hot Sauce into the cup of milk and add the beaten egg. Mix well.
2. In a large mixing bowl, add the cornmeal mix, creamed corn, peppers and mix gently to combine.
3. Add your milk mixture to the mixing bowl and fold to incorporate all the dry ingredients.
4. Fold in your cheddar, being careful not to overmix the batter at this stage.
5. Lastly, fold in your melted butter.
6. Preheat your waffle maker and coat it lightly with a non-stick cooking spray.
7. Add your batter to the waffle maker and cook for 4-6 minutes (depending on the size of your waffle iron. Belgian-style waffles may take the whole 6 minutes)
8. Serve as a side dish, cut into sticks, or pile some delicious BBQ on top and serve as an entrée. However you serve this—it will be a winner!

2LBS Ground Beef
1 Cup Onion Chopped
4 Cups Chili Hot Beans OR 3 Cans Chili Hot Beans or Other Beans
2 Med Bell Peppers OR 3 TBL Dried Bells
3 Cubes Knorr Beef Broth
6 -8 Cups Water
1 Package Kroger Chili Seasoning OR Your Choice
1 27-28 oz Pureed Tomatoes W/garlic & basil
1 TBL Tomato Paste Heaping
1 Jalapeno chopped fine
1TBL Smoked Paprika
1teaspoon Cocoa
1/2-1 Cup macaroni
As always make this your recipe, change it to the ingredients you have or prefer. Brown your ground beef and drain after that just dump all ingredients in a large pot. Simmer till macaroni is tender. Serve with crackers or Cornbread Waffles, recipe below.
Corn Bread Waffles W/Jalapeno's & Cheese
1Cup Self-rising Cornmeal
1/2 Cup Self-rising Flour
1-3 Jalapenos chopped finely
1/2 Cup OR to taste Mexican Blend Shredded Cheese or Cheddar is fine.
1 egg
Add milk to make the consistency of pancake batter.
Mix and make into waffles.
