These Oat Bran Muffins have the nutty flavors of oat bran and whole wheat flour, plus the flavors of molasses, cinnamon, vanilla, and orange zest. And because they are rich in fiber they are wonderfully satisfying. I also like that fact that they are pretty low in fat, just two tablespoons of oil for 12 muffins.

Cranberry Walnut Bran Muffins (easy, quick, simple)
Cranberry Walnut Bran Muffins
Ingredients
• 2 cups (240 grams) oat bran
• ½ cup (56 grams) walnuts
• ½ cup (80 grams) reduced sugar dried cranberries
• 2 teaspoons baking powder
• pinch of salt
• 1 tablespoon cinnamon
• Additional sweetener to taste if desired
• ½ cup (123 grams) unsweetened applesauce
• 1 cup (8 ounces) cashew milk
• ½ cup (4 ounces) honey
• 1 egg
Directions
Preheat oven to 400 F. Combine all dry ingredients in one bowl and wet ingredients in a separate bowl. Mix the contents of both bowls until well blended then add wet to dry whisking until fully blended. Spay muffin tin with nonstick cooking spray and evenly distribute mixture. Place in preheated oven for 10 minutes after first 10 minutes reduce heat to 350 and bake for an additional 10 minutes for a total of 20 minutes. Remove and allow to cool. Should make 12 muffins.

• 1½ cups 100% all bran cereal
• 1 cup buttermilk
• 1/3 cup coconut oil melted
• 1 large egg
• 2/3 cup brown sugar
• 1/2 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
✅Instructions
00:00:53 - What kind of bran cereal to use for muffins
1️⃣ 00:00:44 - Preheat oven to 450 degrees Fahrenheit. Lightly spray a muffin pan with nonstick spray or line with paper cups.
2️⃣ 00:00:53 - In a medium sized mixing bowl soak bran cereal and buttermilk for about 10 minutes until it gets all soggy.
3️⃣ 00:01:30 - Add in melted coconut oil, egg, brown sugar, vanilla extract, flour, baking soda, baking powder and salt. Stir thoroughly. This mixture will be very thick.
4️⃣ 00:02:34 - Divide the batter equally among the 12 muffin cups, filling almost all the way full.
5️⃣ 00:02:57 - Bake in the preheated 450 degree oven for 5 minutes. Without opening the door, reduce the heat to 350 degrees and let the muffins continue baking another 8 to 10 minutes. Remove from the pan and cool on a wire rack.
