How To make Cranberry Cornmeal Muffins
1 c flour, unbleached
3/4 c cornmeal
1/3 c granulated sugar
2 tsps baking powder
1 egg white
whipped
3/4 c buttermilk :
* see note
1/4 c fat-free sour cream
1/2 tsp lemon peel grated
1 c cranberries :
chopped
Preheat oven to 350. Prepare 12 muffin pans with cooking spray and flour; set aside. In a mixing bowl, combine flour, cornmeal, 1/3 cup sugar, and baking powder. In another mixing bowl, combine egg white, buttermilk, sour cream, lemon peel, and cranberries. Use an ice cream scoop to fill muffin tins 2/3 full. Bake for 20 minutes or until golden.
*Buttermilk Substitute: Combine 2 teaspoons vinegar with enough milk to equal 3/4 cup; let stand 5 minutes.

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 1/2 cups all-purpose flour
1 1/2 cup cornmeal
2 teaspoons baking powder
1 1/2 cups buttermilk
1 cup dried cranberries
In a bowl, mix butter, sugar and eggs with hand mixer
Add flour, baking powder and cornmeal and mix
Fold in cranberries
Pour mixture into buttered baking pan
Bake in oven at 375-degrees for 40-45 mins

●1/3 cup sugar
●2 teaspoons baking powder
●1/2 teaspoon salt
●2 eggs
●3/4 cup milk
●1/4 cup vegetable oil
●1 cup chopped fresh or frozen cranberries
●2 tablespoons sugar
Cranberry cornmeal muffins

I give these muffins a 6/10 they were a bit dry I wouldn't really make them again unless I added all the butter, which I believe that's mainly the reason its so dry, or maybe if you took out the cornmeal but overall the cranberries added that extra flavor but personally this recipe isn't my style.

BETH'S CORNBREAD MUFFINS WITH RASPBERRY CENTERS
Makes 12 muffins
INGREDIENTS:
1 ¼ cup (137 g) of flour
1 ¼ cup (200 g) of cornmeal
½ c (100 g) sugar
2 tsp (10g) baking powder
1 (5 g) tsp salt
¾ cup (180 ml) vegetable oil
2 eggs lightly beaten
1 cup (240 ml) milk
2 tbsp (30 ml) melted butter for greasing tin
12 tsp (60 ml) raspberry jam
12 fresh or frozen raspberries
METHOD:
Preheat to 350 degrees F (176 C).
In a large bowl combine the flour, cornmeal, sugar, baking powder and salt. Whisk together. Add the oil, eggs and milk and stir until combined.
Grease muffin tin with butter, using a pastry brush.
Using an ice cream scoop, fill half the scoop with batter and place into each well, add 1 tsp of the jam, then scoop second half of batter and place on top. Then top with a raspberry.
Bake for 10-12 mins until slightly risen and cornbread looks set. Allow to cool slightly and remove from the tin and serve.

Kernels from 2 corns
1 cup veggie broth
1 4 oz cup unsweetened applesauce
5 deglet dates, can add more if want sweeter
2 tbs coconut sugar
1/2 tsp salt
1 cup unsweetened cranberries (can sub for raspberries)
3-4 pickled jalapeños chopped
Handful chopped pistachios
2 cups cornmeal
1 cup oats ground into flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground sage
1 tsp ground thyme
Mix cranberries, jalapeños, and kernels from 1 corn with flour and rest of dry ingredients. Blend veggie broth, kernels from 1 corn, applesauce, dates. Add to dry and mix.
Place batter in cupcake liners and bake around 25-30 minutes at 350F.
