忌廉芝士擠花曲奇食譜 (Cream Cheese Spritz Cookies Recipe)

這個食譜是買cookie press時送的, 我稍為修改了一下。用cookie press很快就可以做好大量漂亮且大小一樣的曲奇。比起普通曲奇, 加了忌廉芝士的曲奇味道更加豐富。這款曲奇的口感非常鬆脆, 而且有濃濃的肉桂香味, 希望大家也會嘗試一下吧。
材料:
✿ 無鹽牛油 (室溫放軟) 227g
✿ 忌廉芝士 (室溫放軟) 85g (3oz)
✿ 砂糖 100g (原本的食譜是200g砂糖, 但我覺得太甜了, 100g就已經很足夠, 不喜歡甜的話可以再減少份量)
✿ 蛋黃 1個
✿ 雲呢拿油 1茶匙
✿ 中筋麵粉 340g (原本的食譜是約312g)
✿ 鹽 1/4茶匙
✿ 肉桂粉 1/2茶匙 (不喜歡可以不加)
做法:
1. 預熱焗爐至175°C (350°F)
2. 把麵粉, 鹽及肉桂粉稍為攪拌, 放到一旁備用
3. 在另一個盤中, 把牛油跟忌廉芝士打勻
4. 加入糖, 蛋黃和雲呢拿油, 打至淡白及滑身
5. 分3次加入備用的麵粉, 鹽及肉桂粉, , 慢慢打至融合 (切勿過份攪拌)
6. 把麵團放進cookie press, 在無油的焗盤上壓出曲奇 (也可以把麵團放進冰箱數小時再用曲奇模做曲奇)
7. 把壓好的曲奇放進冰箱10-15分鐘, 這樣可以減少曲奇烤焗時發漲的程度
8. 把曲奇放進已預熱的焗爐中, 焗8-10分鐘, 焗到一半時間後 (約4分鐘) 把焗盤左右翻轉
9. 當曲奇邊呈金黃色就是焗好了!

This recipe comes along with my cookie press, I did slightly modify it. Using this cookie press, I can make batches of cookies which are pretty and identical easily. Compared to butter cookies, cream cheese cookies have a richer flavour. These cookies are super fluffy with the amazing smell of cinnamon. I wish everyone could try to make them!
Ingredients:
✿ 227g (1 cup) Unsalted butter (softened in room temperature)
✿ 85g (3oz) Cream cheese (softened in room temperature)
✿ 100g Granulated sugar*
✿ 1 Egg yolk
✿ 1 tsp Vanilla
✿ 340g (1 1/2cup) Plain flour
✿ 1/4 tsp Salt
✿ 1/2 tsp Ground cinnamon
* The original recipe calls for 200g, which I think is too much. 100g sugar can already give the sweetness that I want. If you totally don't have a sweet tooth, you may add even less sugar.
Steps:
1. Preheat the oven to 175°C (350°F)
2. Mix together the flour, salt and cinnamon, then set it aside for later use
3. In another bowl, cream together the butter and cream cheese
4. Add sugar, egg yolk and vanilla and beat until light and fluffy
5. Add 1/3 of the flour mixture at a time, beat until well incorporated (Do not over mix!)
6. Place the dough in cookie press and press it out onto an ungreased pan (If you want, you may put the dough into the fridge for a few hours then cut out your cookies)
7. Put the cookies into the fridge for 10-15 mins so it reduces the spreading
8. Put the cookies into the preheated oven for 8-10 mins, rotate the pan halfway through baking time
9. When the cookies are golden brown on the edges, they are done!
How to Make Spritz Cookies!! Classic Spritz Cookie Recipe
Learn how to make classic spritz cookies! Including how to use both new and old cookie presses. These cookies are slightly crunchy, buttery, not too sweet and absolutely, the most addicting cookies you will ever have! They are a tradition on many holiday tables but many folk have problems making them. Let me take all the guess work out of it!
What you'll need:
2 sticks (1 cup) unsalted butter, softened
2/3 cup granulated sugar
2 large egg yolks
2 tsp milk
2 tsp vanilla extract
1/2 tsp almond extract
2-1/4 cups all-purpose flour
1/4 tsp salt
Cream together butter and sugar in a large bowl until creamy. Add in wet ingredients and mix well. Add in flour and salt and mix to combine. Color the dough if you wish to do so or leave it plain. **DO NOT REFRIGERATE DOUGH** Put into a cookie press and press out onto an ungreased, room temp cookie sheet. Decorate if desired with colored sugar, dragees, nonpareils, sprinkles, etc. Bake in a preheated 350*F oven for 9-11 minutes or until done but not browned. Let cool a few minutes on the cookie sheet and then remove to a wire rack to cool completely. Let cookie sheet cool before pressing out more cookies. If using a new press, makes 7-8 dozen cookies. If using an old press, makes 3-4 dozen cookies. Store in an airtight container. Enjoy!

Christmas is just a week away so time to tuck into holiday baking in preparation for the big day! Today I have a delicious chocolate, cream cheese press cookie that is simple to make, delicious and will be well received by friends and loved ones alike! Delicate yet sturdy enough to travel, you will love these cookies!
These are a variation on my pressed butter cookies. I love adding the cream cheese to these, they add tang and structure to the finished cookie and it makes this dough just perfect for putting through the press!
These press out quick and bake very nice. Be sure to let the cookies remain on the pan for a bit before removing to a rack. Store the cookies in an airtight container interleaved with parchment. This will help the cookies stay fresh for up to a week!
