Easy Amazing Oreo Pie Recipe

Cookies and Cream Pie
This is the best selling pie at the diner I work at. This is pretty much exactly as I make it for them. Without ice cream!
What you'll need:
1 cup half and half
1 (3.4oz) pkg instant vanilla pudding
12-15 Oreo cookies
1 (8oz) container whipped topping (Cool-Whip)
chocolate cookie crust - I make my own as can be seen here:
whipped cream or additional whipped topping for the top
Mix the half and half with the vanilla pudding until thickened. Add in crushed Oreo cookies. Mix to cover the cookies with pudding mixture. Stir in whipped topping until fully mixed. Pour into a pre-baked chocolate cookie crust. Freeze for 1 hour to set up the pie. Decorate the top as you wish and refrigerate. Enjoy!

Oatmeal Cream Pies
Makes: 8 sandwiches
INGREDIENTS
COOKIES
1 cup light brown sugar, packed
1 cup butter, melted
⅓ cup molasses
1 teaspoon vanilla extract
2 eggs
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
2 cups old-fashioned or quick oats
FILLING
½ cup butter, softened
1 tablespoon milk or heavy cream
1 teaspoon vanilla extract
1 cup marshmallow fluff
PREPARATION
1. Preheat the oven to 350ºF/180ºC.
2. In a large bowl, mix the butter and brown sugar until well combined.
3. Add the molasses, vanilla, and eggs, and whisk thoroughly.
4. Sift in the flour, baking soda, salt, and cinnamon. Mix until just combined.
5. Add the oats and mix until incorporated. Be careful not to overmix the batter or it might result in tougher cookies.
6. Using an ice cream scoop (or about 2 tablespoons), scoop out cookies onto a baking sheet lined with parchment paper, leaving about 3 inches between each one.
7. Bake for 7-9 minutes. The cookies will still be very soft, so be sure to let them cool thoroughly.
8. While cooling, make the filling by beating the butter, milk, vanilla, and marshmallow fluff until well combined.
9. Once the cookies are cooled, put a spoonful of the filling on one cookie and sandwich with another. Repeat until all the sandwiches are made.
10. Enjoy!

Mini Cookies ‘N’ Cream Ice Cream Pies
Servings: 6
INGREDIENTS
12 chocolate sandwich cookies
2 tablespoons butter, melted
1 cup heavy whipping cream
7 ounces condensed milk
½ teaspoon vanilla extract
6 chocolate sandwich cookies, crumbled
PREPARATION
Separate the icing from the chocolate sandwich cookies. Reserve the icing and put the cookies in a resealable plastic bag.
Pound the cookies with a rolling pin until they reach a fine crumble. Transfer to a small bowl and mix with the butter until well combined.
Evenly distribute the crumble mixture into a 6-cup muffin tin lined with cupcake liners and firmly press the crumbs to form an even crust in each cup.
In a medium bowl, combine the cream, condensed milk, vanilla extract, and the sandwich cookie icing. Whisk the ingredients until soft peaks form.
Gently form in the cookies. Transfer the mixture to the muffin tin.
Freeze for 4 hours, or until the ice cream has solidified.
Remove the cupcake liners, and enjoy!

1/2 tsp salt
1 large free range egg
2 tsp vanilla extract
230g unsalted butter
100g caster sugar
220g light soft brown sugar
150g milk chocolate chips
400ml double cream
2 tbsp caster sugar
