It's the iconic filling used in eclairs, cream puffs, mille feuille, and fruit tarts. Creme patissiere is one of my all-time favorite things to make! It has such a sophisticated taste that goes perfectly with everything! You can flavor it in all sorts of ways too so don't feel limited to just vanilla!

PERFECT Pastry Cream Recipe | Best Custard Cream
Today, I am sharing how to make pastry cream from scratch! Some might call it custard, custard cream, crème pâtissière, French pastry cream, etc. We need to know how to make pastry cream from scratch to be able to make so many types of desserts such as fraisier, cream puff, eclairs, fruit custard tart, or cream such as a creme diplomat, creme mousseline, etc!
I explain the steps in detail so you can also make your own perfect pastry cream at home. Follow the steps exactly to make the super creamy & shiny pastry cream.
???? The Ingredients to make pastry cream:
Whole Milk: 400 g | 14.1oz (1 2/3 US cups)
Vanilla Beans: 1/2 stick * Updated
Granulated Sugar: 100 g | 3.5 oz (1/2 US cup) * Updated
Egg Yolks: 4
Corn Starch: 20 g | 0.7oz (2.5 Tbsp) * Leven the surface.
All-purpose flour: 20 g | 0.7 oz (2.5 Tbsp)
Salt: A pinch
Butter (Unsalted): 30g | 1oz (2 Tbsp)

You can make this crème pâtissière, vanilla custard ,pastry cream at home for desserts using simple ingredients.

Best Chocolate Eclair Recipe
This ridiculously delicious chocolate eclair recipe made from airy choux pastry filled with vanilla pastry cream and dipped in chocolate are nearly foolproof to make and will be gone in a flash, éclair actually translates to “flash of lightning”! The airy choux pastry is SUPER EASY to work with and VERY versatile. Not to mention that pastry cream is basically the best thing to come out of France… Ever. I ate all of these and was in heaven. Shhhh our secret!

If you want to make cream puffs just pipe some dots like I did for the second batch. You can fill them with pastry cream, whipped cream or anything you like!
HOW LONG DO CHOCOLATE ECLAIRS LAST?
Eclairs are best when served within a few hours of assembly. If you have to they are still delicious the next day. Make sure to refrigerate them in a sealed or covered container.
You can make the shells and pastry cream a few days in advance and keep them in a sealed container at room temperature then fill and dip them before serving.
The pate a choux shells can be frozen and kept for 2 months before being thawed and filled.
