Potato and cabbage casserole is a perfect dish for dinner or supper. It comes out tender and hearty.

✅ Ingredients:
• cabbage – 14 oz | 400 g
• potato – 1 lb | 450 g
• vegetable oil – 4 tbsp
• onion – 5 oz | 150 g
• carrot – 4,5 oz | 130 g
• 1 bell pepper
• 1 red chili pepper
• red chili flakes – 1 tsp
• ground black pepper – 1 tsp
• salt – 1 tsp
• cheddar cheese – 7 oz | 200 g
Sauce:
• 3 eggs
• milk – ⅔ cup | 170 ml
• sour cream – 6 oz | 170 g
• vegetable oil – 3 tbsp
• fresh parsley – ⅓ oz | 10 g
• all-purpose flour – 4 tbsp
• baking powder – ⅓ oz | 10 g
• salt – 1 tsp
✔︎ You will need:
• oven
• baking dish 9,5*14*2 in | 24*35*5 cm
• pan with a lid
• cutting board
???? Preparation:
1. Cut the potato, onion and bell pepper into small dices, the white cabbage and carrot into thin strips and chop up the parsley.
2. Heat a pan with 3 tbsp of vegetable oil, add the onion and fry for 5 minutes over medium heat.
3. Add the potato, stir, cover with a lid and fry over low heat for 5 minutes.
4. Then add the white cabbage, carrot, bell and chili pepper, cover with the lid and simmer for 5 minutes over low heat stirring occasionally.
5. Add the ground black pepper, red chili flakes and salt, stir, cover the lid and simmer over low heat for 5 minutes.
6. Cool down the fried veggies.
7. In a bowl whish 3 eggs, add the milk, sour cream, salt and vegetable oil and stir. Add the flour and baking powder, stir well with the whisk until smooth, add the chopped-up parsley and stir.
8. Brush a baking dish with 1 tbsp of vegetable oil and lay out the fried veggies, add the sauce, combine and spread evenly within the dish.
9. Bake for 25 minutes at 350°F / 180°C.
10. Sprinkle with the grated cheese and bake for another 5 minutes at 350°F / 180°C.
11. Serve the potato and cabbage casserole hot.
❗️Advices:
1. Cheddar can be changed for mozzarella.
2. Add any veggies to your taste to casserole.
3. Serve with sour cream and favorite sauces

Oven Roasted Cabbage with Dejon Tahini Dressing
Ingredients:
1 big cabbage, cut into 6-8 wedges
Sprinkle of salt, pepper and garlic powder
8 cloves garlic
10 sprigs fresh thyme
3 tbsp olive oil
1/2 cup sliced almonds
Fresh parsley to garnish
Tahini dressing (see instructions below)
Instructions:
1). Using a sharp knife, carefully cut the cabbage into 6-8 wedges, depending on the size of the cabbage.
2) Fill up a bowl with lots of water and add all the cabbage wedges inside. Sprinkle a generous amount of kosher salt, and let soak for 10 minutes.
3) Transfer the cabbages to a colander and wash under running water to remove all the salt.
4) Prepare a baking sheet lined with parchment paper. Arrange all the cabbages on top and generously sprinkle with salt, pepper, and some garlic powder.
5). Strip some of the fresh thyme and sprinkle it on the cabbages, the rest, leave as is, and add to the center of the pan. Add the garlic cloves as well.
6) Use a brush, or simply drizzle olive oil all over the cabbages and place in a preheated 400 F. Degree oven for about 45- 50 minutes, or until golden brown. Flip once at the middle point.
7) In the meantime, toast the sliced almonds in a dry pan. Keep mixing until fragrant and toasted. Remove from the heat and let cool until ready to use.
For the tahini dejon dressing:
Make your regular tahini dressing
Using 1/3 cup raw tahini 1/3 cup water, add fresh lemon , 1 garlic clove, salt and pepper, and mix until very smooth. Then add 1 tbsp Dejon mustard, and 1 tbsp honey or maple. Add 1 tbsp chopped parsley and mix. Set the dressing aside until ready to use.
To assemble:
Remove the roasted cabbage from the oven and transfer to a serving plate. Serve 1-2 wedges per person on a plate, and add a generous amount of tahini drizzle on top, and garnish with the toasted almonds on top and a sprinkle of chopped parsley.
