CRISP SUGAR COOKIES – FOOD PREP
CRISP SUGAR COOKIES – FOOD PREP
I'm having some fun doing my Christmas baking in advance...well without the baking. I'm simply prepping my cookie dough and storing it in the freezer for easy baking when it's closer to Christmas. You don't need to wait for the holidays to do this. You can do it anytime so you can have fresh baked cookies anytime you want. A little work on the front end makes life so much simpler down the road. I have included the cookie recipe here for you just in case you want to give it a try. FYI, in my video I misspoke and said 2 cups of sugar instead of one cup. It is one cup. The recipe is correct. Thank you for watching. Please LIKE, SUBSCRIBE AND SHARE. I welcome your comments.

CRISP SUGAR COOKIES
2 ¼ C. Flour
2 Tsp baking powder
Pinch of salt
½ C margarine or butter
1 C. Sugar
2 eggs
1Tbs milk
1 Tsp vanilla
Melt butter or margarine over low heat. Stir in sugar, milk and vanilla until smooth. In a small bowl mix the eggs together. Add a little of the warm butter/sugar mixture to the eggs and mix well. This will keep your eggs from cooking in the hot mixture. Then add the eggs to the rest of the hot mixture and mix thoroughly. In a separate bowl mix the flour, baking powder and salt. Add the liquid mixture to the dry mix and mix completely. Place the cookie mixture in the refrigerator until cold and firmed up. Preheat the oven to 350º Drop by heaping tsp on a greased cookie sheet. You can press slightly with a sugared glass if you like. Bake for 8 to 12 min. on the middle rack. Cool completely before storing.

Instructions
00:00 Introduction
00:19 Brown the butter. Place butter in a saucepan or skillet over medium-low heat and cook until melted. Once melted, increase heat to medium and cook, stirring constantly. Butter will sizzle and pop, scrape the bottom of the pan and swirl as it does. Once the sizzling and popping slows and brown flecks form, remove the butter from heat and pour into a large heatproof mixing bowl. Allow to cool until completely re-solidified before proceeding.
03:19 Preheat oven to 350F and line a baking sheet with parchment paper. Set aside.
03:23 Prepare the batter: Once butter has resolidified, add sugars and beat butter and sugar until creamy and well-combined (about 1 minute on high speed.)
03:58 Add egg and vanilla extract and beat again until combined.
04:18 In a separate bowl, whisk together flour, baking soda, and salt. Gradually stir dry ingredients into butter mixture.
04:47 Stir in toffee bits until combined.
04:57 Scoop and bake: Scoop dough by a level Tablespoon and drop onto prepared baking sheet, spacing cookies at least 2” apart. Transfer to center rack of 350F oven and bake for 10-12 minutes, cookies should be beginning to turn light golden brown.
05:27 Allow cookies to cool completely on baking sheet. While they’re still warm they’ll be a bit soft, but once cooled completely they should be crispy.
Notes
Brown Butter
You can prepare the brown butter a day in advance, just store in an airtight container at room temperature.
Storing
Store cookies in an airtight container for up to 3 days.
