How To make Crumb Cake
TOPPING:
1/4 c Sugar
1/4 c Brown Sugar
2 ts Cinnamon
1 c Flour, Unbleached, Unsifted
1/2 c Butter Or Margarine
CAKE:
2 1/4 c Flour, Unbleached, Unsifted
1/4 c Sugar
1/4 ts Salt
1 pk Yeast, Dry
3/4 c Milk
1/2 c Butter Or Margarine
1 lg Egg
TOPPING: For topping, mix sugars, cinnamon and flour. Cut in butter until mixture is crumbly. CAKE: To make cake, mix 1 cup flour, sugar, salt and yeast in a large bowl. Place milk and butter in a sauce pan and heat until very warm (120?F to 130?F). Gradually add to dry ingredients; beat 2 minutes. Beat in egg and 1 cup flour. Beat on high speed for 2 minutes. Stir in enough flour to make a soft but stiff batter. Spread batter into a well-greased 9-inch square cake pan. Sprinkle with topping. Let rise in a warm place until double in bulk, about 1-1/2 hours. Bake at 350?F for about 45 minutes or until done. Makes one 9-inch square cake.

So about a week or so ago I put a poll up on the Average Guy Gourmet Facebook page to see which of two desserts I would make. A Rum Cake or a New York Crumb Cake... Well as you can tell by the title of the video the winner of the poll was the New York Crumb Cake!! Make sure to head over to Facebook a little later tonight for another dessert recipe poll. Help decide what I am posting! Anyway I am kinda glad this one one, while I do like Rum Cake I LOVE this Crumb Cake lol it came out so freaking good and totally destroyed my diet. I think I am just off of it until the new year lol. So go ahead guys give this one a try know you will totally fall in love with it! 1¾ cups All Purpose Flour (227 gms)
¼ tsp Baking Soda (5 gms)

Warm Water
½ tbsp Instant Coffee Granules (56gms)
⅓ cup Sour Cream (85 gms)
50 gms Yogurt
50 ml Milk
½ cup Sugar (100 gms)
⅜ cup Dark Brown Sugar (75gms)
⅛ cup Oil (28 ml)
6 tbsp Butter (85 gms)
165℃ 30 minutes

BLUEBERRY CRUMB CAKE RECIPE
Makes 9 squares

INGREDIENTS:
½ cup (120g) of butter
¾ cup (150g) sugar
2 eggs
1 tsp (5 ml) vanilla
2 cups (240g) of flour
2 tsp (10 ml) baking powder
½ tsp (2.5ml) salt
½ cup (120 ml) milk
2 cups (300g) fresh blueberries
Topping:
1 cup (200g) of sugar
½ cup (60g) flour
1 tsp (5 ml) cinnamon
½ cup (120g) butter
METHOD:
Preheat oven to 350F (175C).
Spray a square 10” x 10” (25cm x 25cm) pan with baking spray. Set aside
In the bowl of an electric mixer beat together butter and sugar until smooth and fluffy, add eggs one at a time and beat well until light and fluffy, add vanilla. Set aside.
In a small bowl combine flour, baking powder and salt whisk together. Add flour mixture in thirds, alternating with the milk until a batter forms. Remove bowl from the mixer.
Fold in blueberries. Transfer batter to pan. Set aside.
In a small bowl whisk together the topping. Add the sugar, flour and cinnamon. Whisk to combine. Cut in butter with hands until small crumbs form. Sprinkle topping on top of batter until a layer is formed and batter is fully covered.
Bake 40-45 mins until golden brown and a toothpick comes out clean. Allow to cool completely. Run sharp knife along perimeter of cake to loosen before removing it. Cut into 9 squares and serve!

Berry Crumb Cake Recipe:
Ingredients for Berry Cake:
1/4 cup vegetable oil
3 large eggs room temp
1 cup granulated sugar
2 cups grams all-purpose flour
2 1/2 tsp baking powder
1 Tbsp lemon zest from 1 large lemon
1 tsp vanilla extract
1/3 cup seltzer water or club soda
10 oz mixed berries 2 cups*
Ingredients for Crumb Topping:
3/4 cup all-purpose flour
1/4 cup granulated sugar
4 Tbsp unsalted butter softened
1/4 tsp sea salt
Instructions
How to Make Berry Crumb Cake Recipe:
Prep: Preheat oven to 350˚F. Line the bottom of a springform pan with a ring of parchment paper. Grease sides lightly with non-stick cooking spray.
In a large mixing bowl using an electric hand mixer (or stand mixer), beat together eggs and sugar on high speed 5 minutes until thick. Stir in 1/4 cup olive oil.
In a separate small bowl, whisk together flour and baking powder. Add 1/2 flour mixture to the batter, mixing on low speed just until incorporated.
Stir in 1 Tbsp lemon zest and 1 tsp vanilla. With the mixer on low speed, add 1/3 cup club soda, mixing until incorporated.
Add remaining 1/2 of the flour mixture, transfer to prepared pan and even out the top with a spatula. Place berries somewhat evenly over the top.
How to Make Crumb Topping & Assembly:
In a medium bowl, combine the crumble topping ingredients. Rub the butter and flour together with your fingertips to create crumbs. Bake for 45 min. until golden brown on top and a toothpick inserted in the center comes out clean. Be sure not to over-bake or the cake will turn out dry.
