1 c Low-fat buttermilk
2 Eggs; OR...
1/2 c - frozen egg substitute
- (thawed) OR... 4 -Egg whites
3 tb Vegetable oil
1/3 c Orange juice concentrate
-- (frozen), thawed 1 tb Grated orange peel, optional
1 c Chopped pitted dates

1.5 C all-purpose flour
¾ C regular oats
⅓ C sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon baking salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
4 Tbsp Butter
1 C milk plus 1 Tbsp lemon juice (1 C buttermilk)
1 egg
7 Dates, pitted
1 C shredded carrots

Today I’m sharing my DATE & PECAN MINI MUFFINS recipe!
Date & Pecan mini muffins are very nice tea muffins bursting with the flavor of sweet dates and toasted crunchy pecans & walnuts.
These muffins are moist, tender sweet packed with chopped dates and toasted pecans n walnuts. You must definitely add these super healthy muffins to your winter bake list. It’s like a warm hug, best enjoyed with a cup of coffee or tea.
I prefer making muffins over a loaf of cake bread as it’s much easier and neater to carry a muffin when I am in a hurry every morning. Plus, it controls my dessert-eating portions better.
The highly recommend you to use toasted nuts in this recipe it really compliments the muffins.
they make a great breakfast for busy mornings or a quick afternoon snack or with a cup of coffee. In this recipe only brown sugar is used no white sugar. Hope you love these nutty date muffins as much as I do!

Dates add a pleasing sweetness to the orange, but are also a healthy fruit as well! These orange date muffins only take minutes to whip up, and they are very healthy. Are you going to give it a try?
Ingredients for muffins:
Flour 260g
Brown sugar 140g
Baking powder 2 tsp
Baking soda 1/2 tsp
Salt 1/2 tsp
Cinnamon powder 1/2 tsp
Grated orange zest 2 tbsp
Orange juice 80ml
Buttermilk 180ml
Egg 1 (lightly beaten)
Vanilla extract 1 tsp
Butter 5 tbsp (melted and cooled)
Chopped dates 110g
Walnuts 55g
How to make buttermilk at home:
1 tbsp vinegar or lemon juice and 1 cup of milk of choice. Mix and let it sit for 10 minutes.
