8 Chicken breasts; boned, -skinned 1 Bottle teriyaki sauce 1 tb Minced fresh ginger 1/2 c Vidalia onions Juice and pulp of one orange 1/4 c Grated orange zest Mix all ingredients; heat marinade to a boil and then let it cool. Teriyaki Chicken: Healthy version
INGREDIENTS; 1 head broccoli, chopped 2 carrots, sliced into sticks 1 eggplant, chopped 2½ tbsp olive oil sea salt, to taste 2 chicken breast
For the marinade: 1 tbsp sesame seeds 1 tbsp dijon mustard 1 tsp ginger, grated 2 tsp honey 2 tsp sesame oil ¼ cup soy sauce
Direction : Preheat the oven to 250°C. 2. Place the broccoli, carrots and eggplant on a baking pot. Leave space for the chicken breast. Drizzle the vegetables with olive oil and a generous sprinkle of salt. 3. Add chicken breast to the middle 4. To make the marinade, place all of the ingredients in a small bowl. Whisk together until they're smooth. Spoon 2 tbsp of marinade over each chicken breast. Spoon remaining marinade over vegetables. 5. Place the pan in the oven and roast for until the chicken is cooked through (35-45 min) 6. Serve with brown rice, if desired. Servings: 3 people
