Double Chocolate Biscotti
2 cups all purpose flour
2 tbsp espresso powder
1 cup sugar
½ cup butter
½ tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup cocoa powder
3 eggs
1 tbsp vanilla extract
½ tsp almond extract
1 cup toasted almonds chopped
1 cup chocolate chips
1 tsp coconut oil
Preheat the oven to 350 degrees
In a bowl, add flour, salt, cocoa powder, espresso,baking powder, and baking soda. Blend everything well.
In a large bowl, add eggs, sugar and butter. Blend everything until a creamy mixture. Add flour and mix well. Add almonds and incorporate everything.
In a cookie sheet line with parchment paper. Drop the dough and form into a large log or 2 small logs.
Bake the log in the middle rack for 40 minutes. Remove from the oven, let cool completely. In a cutting board slice the log on a diagonal about ½ inches. Arrange sliced biscotti back to the cookie sheet and bake for another 20 minutes or until dry out throughout.
Let them cool, in a microwave proof bowl, add coconut oil and chocolate chips. Microwave for 1 minute or until the chocolate chips are all melted. Dip the biscotti in the chocolate and place it back on the cookie sheet. Place the cookie sheet in the refrigerator for about 10 minutes. Place them in an air thighs container in a cool place and away from heat.

Pré-aqueça o forno a 350 graus
Em uma tigela, adicione a farinha, o sal, o cacau em pó, o café expresso, o fermento em pó e o bicarbonato de sódio. Misture tudo bem.
Em uma tigela grande, adicione os ovos, o açúcar e a manteiga. Bata tudo até obter uma mistura cremosa. Adicione farinha e mexa bem. Adicione as amêndoas e incorpore tudo.
Em uma linha de assadeira com papel manteiga. Solte a massa e forme um tronco grande ou 2 troncos pequenos.
Asse o log no rack do meio por 40 minutos. Retire do forno, deixe esfriar completamente. Em uma tábua de corte, corte o tronco na diagonal cerca de ½ polegada. Arrume os biscoitos fatiados de volta na assadeira e asse por mais 20 minutos ou até secarem.
Deixe esfriar, em uma tigela própria para micro-ondas, adicione o óleo de coco e as gotas de chocolate. Leve ao micro-ondas por 1 minuto ou até que as gotas de chocolate estejam derretidas. Mergulhe os biscoitos no chocolate e coloque-os de volta na assadeira. Coloque a assadeira na geladeira por cerca de 10 minutos. Coloque-os em um recipiente de coxas de ar em local fresco e longe do calor.

Ingredients
¾ cup (150 g) granulated sugar (caster sugar)
½ cup (125 mL) vegetable oil
2 large eggs
2 tsp (10 mL) finely grated lemon zest
¾ tsp (4 mL) pure almond extract
¾ cup (120 g) whole raw almonds
½ cup (65 g) dried cranberries
1 ¾ cups (265 g) all-purpose flour (plain flour)
2 tsp (10 mL) baking powder
½ tsp (2 mL) fine salt
½ tsp (2 mL) ground nutmeg
1 egg whisked with 2 Tbsp (30 mL) water, for brushing
Directions
1. Preheat the oven to 325 F (160 C) and line a baking tray with parchment paper.
2. In a large mixing bowl, whisk the sugar, oil, eggs, lemon zest and almond extract together. Stir in the almonds and dried cranberries.
3. Sift the flour, baking powder, salt and nutmeg in a separate bowl, add this to the wet mixture and stir until completely blended. Shape the dough into 2 logs about 12-inches long, place on the baking tray and pat down to flatten (you can flour your hands to prevent sticking). Brush the logs with the egg mixture and bake for about 35 minutes, until a rich golden brown. Cool the logs on the baking tray a little bit, but so they are still warm to the touch.
4. Using a serrated knife, slice the logs into cookies just over ½-inch thick. Place these back on the baking tray, leaving just a little space between them (you may need a second baking tray) and return them to the oven to bake about 20 minutes, until lightly browned. Remove from the baking tray to cool completely.
