How To make Dutch Butter Cake
2/3 c Butter
1 c Sugar
1 ts Almond extract
1 Egg, beaten
1 1/2 c All purpose flour
1/2 ts Baking powder
TOPPING: 1 Egg
1 tb Milk
sliced almonds In bowl, cream butter and sugar. Add almond extract; blend in egg. Mix flour and baking powder; add to butter mixture. Stir dough with fork until smooth. Spread dough in greased 8 inch square cake pan. TOPPING: In bowl, beat egg and milk; brush over dough. Top with almonds. Bake in 350F oven for 30 minutes or until golden brown. Hello lab pals! Have you all been well? :D This one is a really interesting one, but is definitely a keeper!
I have a friend at work who is dutch and because I've never really come across any dutch recipes, I ended up having a conversation with her asking about things that she found nostalgic in terms of desserts. I'm saving one recipe for her birthday, but amongst my research I found a very well known cake in which many families find nostalgic. This includes my friend Nat who immediately recognized what I was talking about upon showing her the dutch name.
It's also known as a heavy cake, strong butter flavour based cake, crispy yet soft and crumbly at the same time. Often with highlights of almond flavour or hints of zest, or simply as is.
What I found interesting about this recipe is that the most difficult part of this super easy cake is maintaining the diamond cuts on top. I found it was easiest to freeze the batter briefly before cutting deep to mark the cut, then lightly dab the knife to deepen or recut the lines about 10-15 min in of baking. Otherwise the batter always seems to melt and cover the cut before the surface has a chance to set.

This Dutch Boterkoek Recipe is so easy to follow. Original Boterkoek is really popular in the Netherlands. You can buy it in the supermarket, but the best way is to make the Butter Cake yourself. 100 grams of granulated sugar
100 grams of white castor sugar
300 grams of unsalted butter
300 grams of all purpose flour
1 egg

◾Instructions
1. Unpack 300 grams of unsalted butter and cut the butter in small cubes. Add the butter to a mixing bowl
2. Add 100 grams of granulated sugar and 100 grams of white castor sugar to the mixing bowl. Knead everything together.
3. Next add 300 grams of flour. Knead the dough into a ball.
4. Cover the bowl and let the dough rest for 1 hour in the fridge.
5. After 1 hour spread the dough evenly in the baking tin.
6. Create the authentic pattern with a fork.
7. Brush the dough with eggwash and let the dough rest for 30 minutes in the fridge.
8. After 30 minutes create the authentic pattern again.
9. Bake the cake for 20 minutes (200°C) golden brown. After 20 minutes let the cake cool completely.
