Dutch Baby

Ingredients
3 large eggs
3/4 cup milk
3/4 cup all-purpose flour
1/2 teaspoon vanilla extract
1 tablespoon plus 1/4 cup maple syrup
6 tablespoons salted butter
1 cup mixed berries
1/4 cup blueberry syrup
Canned whipped cream, for serving
Directions
Preheat the oven to 425 degrees F. Place a large (about 12-inch) cast-iron skillet in the oven so that it gets very hot, 15 to 20 minutes.
Mix the eggs and milk in a blender and blend until smooth, about 30 seconds. Add the flour, vanilla and 1 tablespoon maple syrup, then blend again until smooth, about another 30 seconds.
Carefully remove the hot skillet from the oven and melt 4 tablespoons butter in the skillet. Quickly pour in the batter and return the skillet to the oven. Bake until golden brown and risen, about 25 minutes.
Remove from the oven and cut into wedges immediately, as it will start to deflate. Top with the remaining 2 tablespoons butter, the berries, blueberry syrup, remaining 1/4 cup maple syrup and the whipped cream.

Easy Cinnamon Apple Pancakes Recipe
Fluffy pancakes loaded with tangy sweet apple is the ultimate breakfast treat and it’s so easy. If you’ve never tried adding shredded apple to your pancakes, you’re in for a treat.

DRY INGREDIENTS:
* 2 cups all-purpose flour
* 2 Tbsp granulated sugar
* 2 tsp baking powder
* 1/2 tsp baking soda
* 1/4 tsp fine sea salt
* 1/4 tsp ground cinnamon
WET INGREDIENTS:
* 2 cups low-fat buttermilk
* 2 large eggs
* 1 tsp vanilla extract
* 3 Tbsp unsalted butter, melted
* 2 green apples or 1 lb, peeled and coarsely grated (2 cups)
* 2 Tbsp light olive oil, plus more as needed to sauté

2 eggs, separated

2 cups of buttermilk
Filling:
2-3 apples, peeled and cubed
2-3 pats of butter
juice of half a lemon
2 tablespoons ground cinnamon
pinch of salt

1/2 teaspoon fresh ground nutmeg
1 tablespoon cornstarch for thickening

BETH'S DUTCH BABY PANCAKE RECIPE
Serves 4-6

INGREDIENTS:
3 tbsp (45g) unsalted butter
½ cup (60 g) of flour
¼ tsp (1.75ml) salt
1 tbsp (12g) sugar
1 cup (240 ml) of milk
2 eggs
1 tsp (5 ml) vanilla
1 lemon
1 tbsp (7g) powdered sugar garnish
*Serve with fresh lemon wedges or Raspberry Jam
METHOD:
Preheat Oven to 400F (200C)
In a medium bowl whisk together the flour and the milk until smooth, then add the eggs, salt, sugar and vanilla. Whisk to combine and then set aside.
Place butter in an oven safe skillet, place skillet in the pre-heated oven. Watch pan closely and once butter is sizzling, pour batter into pan. Shut the door (do not open!) and allow pancake to bake for 16-18 mins.
Remove from oven, and dust with powdered sugar.
Cut into wedges and serve. With fresh lemon wedges (or raspberry jam)
