Easy Apple Galette Recipe With Puff Pastry
This puff pastry-based apple galette is filled with warm spiced apples and brings the perfect balance of sweet and tart. The puff pastry crust is perfectly flakey and crisp!

The Most Delicious Apple Galette with Puff Pastry: Easier than Apple Pie!!!

Ingredients
1 (12oz/340g) puff pastry sheet
For the Caramel Sauce:
2 cups granulated sugar
1/3 cup water
6 oz butter, cubed
1 cup heavy whipping cream
1 teaspoon pure vanilla extract
a pinch of salt
For the Apple Filling:
4 large apples (Gala, Granny Smith, or Pink Lady) peeled and cored
juice of half lemon
1/4 cup brown sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
The egg wash:
1 egg
2 tablespoons milk
granulated sugar for topping
Serve with:
ice cream
toasted chopped pecans
confectioner's sugar
Instructions
Make the Caramel Sauce: In a deep saucepan, combine the water and sugar and cook over medium heat for about 10-15 minutes or until a caramle color is reached. Remove from heat and add the butter. Whisk together while wearing oven mitts. The steam is dangerously hot! Add the cream and vanilla and return to medium-heat. Cook for 3-4 minutes while stirring. Add a pinch of salt and pass through a strainer and into a heat-ptoof bowl. As it cools, the caramel sauce will thicken.
Assemble the Galette:
Lightly flour your work surface and roll out the puff pastry sheet 3-4 inches on all sides. Transfer to a baking tray lined with parchment paper and chill in the freezer while the apple filling is prepared.
Slice the apples 1/8-1/4 inch thick and place the slices into a large bowl. Top with the brown sugar, cornstarch, lemon juice, and cinnamon. Toss together until the apples are coated.
Arrange the apples in the center of the puff pastry sheet. Leave a 3-inch border.
Fold the puff pastry crust over the edge of the apple filling to create a border. Press together to seal (see video).
Combine the egg and milk in a bowl and whisk together. Brush the eggwash over the crust and sprinkle with some granulated sugar.
Chill the galette in the freezer while the oven preheats.
3. Preheat the oven to 400 °F, 200 °C.
4. Bake the Galette on the center rack for 40-45 minutes.
5. As soon as the galette comes out of the oven drizzle about a cup of the caramel sauce over the apples.
6. Serve with ice cream and Greek Coffee.

Notes
The Caramel sauce keeps fresh in the refrigerator for 2-3 weeks and in the freezer for over a month.

French Apple Tart

Ingredients
For the pastry:
2 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon sugar
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
1/2 cup ice water
For the apples:
4 Granny Smith apples
1/2 cup sugar
4 tablespoons (1/2 stick) cold unsalted butter, small diced
1/2 cup apricot jelly or warm sieved apricot jam
2 tablespoons Calvados, rum, or water
Directions
For the pastry, place the flour, salt, and sugar in the bowl of a food processor fitted with the steel blade. Pulse for a few seconds to combine. Add the butter and pulse 10 to 12 times, until the butter is in small bits the size of peas. With the motor running, pour the ice water down the feed tube and pulse just until the dough starts to come together. Dump onto a floured board and knead quickly into a ball. Wrap in plastic and refrigerate for at least 1 hour.
Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
Roll the dough slightly larger than 10 by 14-inches. Using a ruler and a small knife, trim the edges. Place the dough on the prepared sheet pan and refrigerate while you prepare the apples.
Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baller. Slice the apples crosswise in 1/4-inch thick slices. Place overlapping slices of apples diagonally down the middle of the tart and continue making diagonal rows on both sides of the first row until the pastry is covered with apple slices. (I tend not to use the apple ends in order to make the arrangement beautiful.) Sprinkle with the full 1/2 cup of sugar and dot with the butter.
Bake for 45 minutes to 1 hour, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The apple juices will burn in the pan but the tart will be fine! When the tart's done, heat the apricot jelly together with the Calvados and brush the apples and the pastry completely with the jelly mixture. Loosen the tart with a metal spatula so it doesn't stick to the paper. Allow to cool and serve warm or at room temperature.
