SALMON BURGER RECIPE
yogurt dill sauce:
1/2 cup plain non-fat Greek yogurt
1 clove garlic crushed
2 tbsp chopped dill
2 tbsp lemon juice
salt and pepper to taste
salmon burgers:
15 ounces can of wild salmon*
1/4 cup diced red onion
1/4 cup diced red pepper
1/4 cup chopped dill packed
Zest from one lemon
1/4 cup lemon juice
1 egg or 3 egg whites
1/3 cup oat flour
1/4 tsp cayenne pepper
salt and pepper to taste
for serving:
arugula
4 whole grain or sprouted buns
Creamy Dill Sauce
Combine all ingredients for dill sauce in a small bowl. Season with salt and pepper and set aside.
Salmon Burger
Combine salmon, onion, red pepper, dill, lemon zest, lemon juice, egg, and oat flour in a large bowl. Season with cayenne pepper, salt and pepper.
Use your hands to shape four burger patties (your burgers should be about four ounces each).
Heat a large non-stick pan over medium heat and cook the burgers for four minutes on each side or until browned and crisp on the edges and heated all the way through.
While your burger is cooking, toast up your English muffins and layer the bottom half of each with a handful of arugula.
Place cooked salmon burger on top of the arugula then top with 2 tbsp of dill sauce before popping on the lid. Enjoy!

Salmon Burgers with Spicy Quick-Pickled Vegetables

Ingredients
4 green onions, roughly chopped
1 red bell pepper, roughly chopped
One 2-inch piece ginger, peeled and roughly chopped
1 clove garlic, peeled and roughly chopped
1 tablespoon lime zest, from 1 lime
1 pound salmon, skin removed and cut into 1 1/2-inch cubes
1 1/4 cups panko breadcrumbs
1 bunch cilantro, stems chopped (about a ¼ cup) and leaves with tender stems reserved to top the burgers
1 tablespoon sweet chili sauce
1 teaspoon toasted sesame oil
1 tablespoon low-sodium soy sauce
Spicy Quick-Pickled Vegetables, recipe follows
Nonstick cooking spray
2 tablespoons vegetable oil
1/3 cup mayonnaise
6 oblong brioche buns, sliced in half through the middle
Spicy Quick-Pickled Vegetables:
1 1/2 cups distilled white vinegar
2 teaspoons pickling spice
Kosher salt
2 Persian cucumbers, sliced into 1/8-inch-thick rounds
1 carrot, peeled and sliced into 1/8-inch-thick rounds
1 shallot, sliced into 1/8-inch-thick rings
1 Fresno chile, stem removed and thinly sliced
Directions
Add the green onion, pepper, ginger, garlic and lime zest to a 12-to-14 cup food processor fitted with the blade attachment. Pulse until the vegetables are finely chopped. Add the salmon, panko, cilantro stems, sweet chili sauce, sesame oil and soy sauce. Pulse to roughly chop the salmon and incorporate into the vegetable mixture. The mixture should be chunky, not a paste. Lightly coat clean hands with nonstick cooking spray and form 6 patties the same shape and size as the buns, about 1/2 cup each.
Heat a large nonstick skillet over medium-high heat. Add the vegetable oil and swirl to cover the pan. Add the patties and cook until the internal temperature is 145 degrees F, about 4 minutes per side.
Assemble the burgers: Lay buns cut side-up on a clean work surface. Spread the mayonnaise evenly inside all of the buns. Place a salmon patty on each of the bottom buns, top with desired amount of pickled vegetables and cilantro leaves. Place bun tops on and serve.
Spicy Quick-Pickled Vegetables:
Yield: About 2 cups
Add the vinegar, 1/2 cup of water, pickling spice and 1/2 teaspoon of salt to a small saucepan. Over medium heat bring the mixture to a simmer, then turn off the heat and add the cucumbers, carrot, shallot and chile. Cool completely. Refrigerator in an airtight container for up to 5 days.

Canned Salmon Burger Recipe - How To Make Easy Vegetarian Salmon Fish Patties | The Food Nut
I present Canned Salmon Burger Recipe in this video. I show how to make vegetarian salmon fish patties from scratch. It's easy and homemade recipe with scallion stalks, cilantro herb, egg, salsa, spices, mayonnaise and mustard. This meatless recipe can easily substitute traditional burger patties if you are tired of them. You will be surprised that the taste will blow your mind as it's not fishy as you might think. You can even call this a cheeseburger as I add some cheese here. I made those vegetarian patties on the pan but you can use grill as well. It takes only few minutes to fry them as there is no raw meat - I use here boneless and skinless canned salmon. If you decide to use raw salmon you will have to fry it longer.
To make salmon patties you will need those ingredients (makes 6 salmon patties):
3 cans (510 g / 18 oz.) boneless and skinless salmon
4 chopped scallion stalks
3 tbsp chopped cilantro
1 egg
2 tbsp Dijon mustard
3 tbsp mayonnaise
1/2 cup salsa
black pepper (I don't add salt to the patties mixture)
Ingredients for breading:
3 tbsp of all-purpose flour
about 1 tsp salt
Other ingredients (for burger toppings):
Some cooking oil for frying
salsa
slices of mozzarella cheese or provolone cheese
6 slices of tomato
red onion
mayo
6 lettuce leafs
6 burger buns
Instructions:
Combine well all salmon patties ingredients in a bowl (DON'T add toppings and breading ingredients!). Smooth and level mixture surface in a bowl. Using spatula split mixture into 6 even portion. This method will help to measure quantity for each salmon patty. One triangle signifies one patty. Shape burger patty in your palms. You should get 6 of them. Mix salt and flour on the plate. This is your breading. Cover each patty with breading and then place them on the plate. Cover patties with plastic wrap and put in the fridge for 1 hour. After that time warm up the pan. Spray with some cooking oil. Place salmon burger patties on the frying pan. Flip them over when the bottom is of a rich golden color.
Meanwhile spray some cooking oil on the grilling pan. When pan is warm add burger buns. Grilling buns will make them crispy. If you don't have grilling pan you may use toaster oven to prepare your burger buns.
When buns and patties are ready you may start composing you burgers. I spread mayo on buns. Next I add on each bun: one lettuce leaf , one slice of cheese, patty and then slice of tomato and red onion. I add extra spoon of salsa on the top. Cover with top part of the burger bun. Salmon burger is ready and it goes excellent with my sweet potatoes fries. Link to this fries is listed below.
